Buckwheat & Banana Pancakes (Low FODMAP)

Ingredients

Buckwheat & Banana Pancakes

  • 100 grams buckwheat, or buckwheat flour
  • 100 grams gluten free flour plain
  • 1 tablespoon baking powder
  • 1 teaspoon Vanilla Exract
  • 1 small banana
  • 250 grams Almond milk
  • 1 egg
  • 1 tablespoon raw cane sugar, or agave

Recipe's preparation

    Buckwheat & Banana Pancakes (Low FODMAP)
  1. Place buckwheat into TM Bowl and mill for 1-2 minutes on speed 9, scrape down sides of bowl.

    Add gluten free flour and baking pawder, mix 5 seconds on speed 5.

    Add remaining ingredients & mix for 10 secs on speed 5. 

    Cook in a medium/hot fry pan with a little macadamia oil, until golden and springy to the touch.

    Serve with your favourite fruit and some yoghurt.

Tip

Skip the banana and use blueberries if you are following the FODMAP elimination diet. 

 

You can use all buckwheat flour for a denser pancake.

    Very good pancakes. They stay fluffy! I added some choc chips to a second batch and very fine sliced apples to a third batch. Kids loved them all.

    Great recipe thank you, my variation was 100g spelt instead of GF flour. I added chia seeds instead of banana and 1.5tbs rice malt syrup. Yummy!

    These were lovely and light and fluffy. A big hit! I changed the sugar to rice malt syrup as we are avoiding sugar, and they were loved by all.

    Made it!! Love it!! Great recipe and doesn't make you feel too bloated or like you have eaten too much. I didn't have banana when I thought I did, so I had to make with apple and chia which was nice still might include berries or chocolate drops or something next time as well.

    I have adjusted the recipe slightly by halving the buckwheat and adding 100g gf flour to make them a little lighter. My daughter absolutely loved them this way.
