Cauliflower Fritters with Mint Yoghurt Dip

  • 1/2 Cauliflower broken into florets
  • 1/2 onion
  • 2 cloves garlic
  • 15 g parsley
  • 4 eggs
  • 1 teaspoon cumin
  • 4 tablespoons rice flour
  • 1 tablespoon Flour, Plain
  • salt & peper, to taste
  • 3/4 teaspoon baking soda / bi-carb soda
  • olive oil for frying

Mint Yoghurt Dip

  • 250 g full fat youghurt
  • 15 g Fresh mint chopped
  • salt to taste

Recipe's preparation

    Fritters
  1. 1. Place cauliflower florets in varoma dish. Place 500g water in TM bowl and place varoma dish on top. Steam 20mins / Varoma / Sp 2

    Once steamed set aside and rinse bowl.

    2. Add onion & garlic to empty TM bowl and cut 6 sec / Sp 7.

    3. Add cauliflower & parsley and cut for a further 5 sec / Sp 5

    4. Add eggs, spices & flours, salt & pepper & mix 10sec / Sp 4.

    5. Add baking soda  and stir through 5sec / Sp 4.

    6. Heat oil in a large fry pan. Place heaped tablespoon of mixture into hot oil and cook for 2mins each side until fritter is crispy golden and cooked through.

    7. Remove fritters and place on absorbent paper.

    8. Friiters store well in a sealed container and can be eaten hot or cold. Perfect for school lunches.

    Wow! So good, followed previous comments and only 3 eggs and some veg stock, and a little more flour - and these were GREAT! Much better than I expected.

  • Very nice but I made a couple

    Very nice but I made a couple of changes.

    i only added 3 eggs, and the mixture was quite sloppy, so glad I did.

    Also added 2 teaspoons curry powder and 2 teaspoons vegetable stock.

    Served with sour cream and a dollop of home made chutney..yumm..

  • The fritters looked great but

    The fritters looked great but were very bland and a bit eggy. Needs more spice or ginger perhaps; I'm not sure. Hopefully someone has an idea as I like the fritter concept and using cauliflower.

    Really loved this recipe, although I did have to tweek it for my personal tastes. I omitted the baking soda ( as it doesn't sit well on my stomach) and didn't have rice flour, so used corn flour. Also instead of spices, I just added a tablespoon on TM veggie stock. Easy please and yummy...thank you.

    Yum, yum, yum! Made a batch of these for lunch today. They are so,light and fluffy. I didn't have any mint, so I served them with tomato sauce! Thanks for sharing  tmrc_emoticons.)
