chunky chicken & leek casserole

Ingredients

6 portion(s)

  • 1 tbsp red curry paste, (Every day cookbook)
  • 2 leeks, thickly sliced
  • 300g chicken (thighs or breasts), largely diced
  • 200g tomatoes, largely diced
  • 3 Small Potatoes, largely diced
  • 2 tbsp vegetable stock concentrate, (Every day cookbook)
  • 600g water
  • 1 large carrots, thickly sliced
  • 1 large handful fresh parsley

Recipe's preparation

  1.  Put red curry paste, vegetable stock and water in the TM bowl and mix for 4 seconds on speed 4.

    2.  Add leeks, chicken, then all other ingredients to the TM bowl and cook for 18mins, 100degC  on Reverse, speed 1-2.

    3.  Serve with rice, mashed potatoes or pasta.

    Too wet! Given the above comment I even used less water but the end result was still very 'soupy.' I had to thicken it up with cornflour but that affected the flavour somewhat. used the TM stock as advised.

    I have not tried it with veggie stock.  It may be the reason!  I am not sure.  Let me know if you try again with either TM stock or Pasta.

    :A disaster for me. More like chicken soup. And the chicken is dry. The flavours are good but that's all. I used liquid veggie stock instead of TM stock and water. Is that the reason it was so soupy?Maybe I'll try cooking pasta in it  to absorb some liquid.
