Paleo Muslie

Ingredients

Drys

  • 100 g Brazil Nuts
  • 200 g almonds
  • 120 g Shredded coconut
  • 200 g pepitas, (Pumpkin Seeds)
  • 100 g linseed (flax seed)
  • 50 g sunflower seeds
  • 50 g chia seeds
  • 50 g sesame seeds
  • 400 g dried cranberries

Wets

  • 200 g honey, Optional depending on taste
  • 2 oranges, liquidised in the thermomix, skin, seeds and all

Recipe's preparation


  1. 1. Rough grind 200g of almonds and 100g brazil nuts - 10sec/sp9 - put it in the biggest bowl you have in the house. 

    2. Shred fresh coconut - 15sec/sp5. Alternatively, use shredded coconut from the supermarket.  Place into your large bowl.
    3. Add Pepitas, Linseeds, Sunflower Seeds, Chia Seeds and Sesame Seeds to the bowl.
    4. Cut washed oranges into quarters and liquidise (skin, seeds and all) at speed 9 for 15 seconds and add to the bowl,
    5. Add the dried cranberries and mix the entire mixture thoroughly.

    6. Lay your museli out on baking trays (lined with baking paper for easy clean up) and bake at 180degree oven for 20mins. Check and stir to move the museli around. Cook for another 10mins. You may be happy with where its at now, if not, pop it back in. Cook it until its toasted to your liking.  Don't overdo the roasting (best to under roast the muslie than burn it).
    7. Let cool in the trays.

    8.  Drizzle with honey and mix well.

    9.  When cool, store in an airtight container in the fridge.

Tip

Suggestioin:  Make a double batch and freeze half of it.  When you have used the first half of toasted muslie, defrost the frozen bag, toast as per above, cool and store.  This makes preparation easy for time-poor people.

 

TIP:  For a tropical variation, add fresh banana and passionfruit then serve.

    Love this museli, its so tasty. Does anybody know if I don't put the honey in it can I just store it in the pantry instead of the fridge?

    Very nice. You only need a small serving as it's quite filling. the quantity will last for ages, which is great value for money. Instead of cranberries I used sultanas, only because 400 grams of cranberries is quite expensive. The taste reminded me of Christmas pudding. tmrc_emoticons.D thanks for sharing.
