Everyday Lunchbox Salad

Ingredients

2 portion(s)

Salad Ingredients:

  • 1 Medium Carrot, Peeled
  • Half a red capsicum
  • 1 Pink lady apple (or any sweet apple), Cored and Quartered
  • 1 stick Celery
  • 1 Small Cucumber
  • 10 mint leaves

Dressing

  • 2 tablespoons lemon juice
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar, (optional)

Recipe's preparation

    Salad
  1. Place all salad ingredients into mixing bowl and chop 2-3 seconds on speed 5.

    Place salad into small lunch sized thermos containers and top with two frozen dressing cubes - these melt through the salad and help to keep it cool.

  3. Mix dressing ingredients and freeze into 4 ice cubes the night before.

Tip

You can use any oil-free salad dressing and freeze it into cubes. Keep a bag of dressing cubes in the freezer so that you can take a few out each morning when making lunch.

Add some protein - top the salad with some feta or cooked chicken breast.

    This is a great idea - thanks Lara. I've made similar but never sorted the dressing - love the idea of the frozen dressing blocks! Simple lunchbox idea that will be a regular in this family!
