Gluten Free Chicken Nuggets

Ingredients

40 portion(s)

  • 500 gms organic chicken breast cut into medium sized chunks
  • 1/4 small brown onion
  • 1 cloveof garlic
  • 1 small-medium sized carrot roughly cut
  • 1/2 medium sized zucchini roughly cut
  • 1 tablespoonof parsley
  • 1 teaspoonof sea salt
  • 1-2 cups of gluten free flour
  • Olive oil

Recipe's preparation

  1. Place onion, garlic, carrot, zucchini, parsley and salt into Thermomix.  Chop on speed 8 for 5-10 seconds or until very finely chopped.

    Add chicken and around 2 tablespoons of flour and chop on speed 8 for 15 - 20 seconds or until it has all blended together to form a mince mixture.

    Take small teaspoon sized amounts and roll into balls and place on a plate.  Cover and place in the fridge for around 30 minutes. 

    Using a non-stick fry pan heat some olive oil.  Coat balls in flour and place them in the pan.   Flatten them using a spatula so that they are in a chicken nugget shape.  Cook on a low-medium heat until golden brown (around 4-5 minutes each side depending on level of heat).

Tip

Get the kids involved and have them help roll the balls and put them in the flour.  Slightly messy but great fun! This is a great way to add some veggies to your child's diet if they are fussy eaters! 

Add some dipping sauce for extra flavour!

This recipe makes a lot of nuggets so you can freeze some and use them another day as a quick, easy meal.

    I made these chicken nuggets last night on a whim and they were a hit with the hubby. I squished them into a more rectangle shape before putting them in the pan, just to get that 'nugget look'. Great recipe, thanks for sharing!

    I've made these several timew and the whole family loves them. I usually make them at the last minute so I don't refrigerate them and I add extra flour to the. Ixture and don't roll them in flour. I bake at 180C for 20 minutes then turn and bake for another 10 minutes at 180C.

    I made these tonight and the flavour was really good. The texture was a little dense but I may have blended them for a couple of seconds too long so next time will aim for a shorter burst with the chicken.

    I made these and even though the mixture was very soft they cooked up great and were very moist inside and the flavour was perfect...even my grandies under 4yrs old liked them and they are a little fussy so ...it gets a five star rating for me ...and  I also needed a Gluten free recipe for myself so many thanks for this  recipe ....I will be making these for the children regularly as I hate the processed ones with a passion. tmrc_emoticons.)
