Golden Roasted Chicken & Gravy
- 1.2kg Whole chicken
- 1/2 stick Celery
- 1 sprigs rosemary
- 1/2 lemon
- 80 g brown onion, peeled
- 2 tablespoon soy sauce
- 2 tablespoon tomato sauce
- 1-2 clove garlic
- 1 Large green apple, cut into rings
- 1 tablespoon cornflour
- 1 litre water, in tm bowl

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Rinse chicken cavity & pat bird dry. Pierce skin several times.
- Place onion, celery stick, rosemary & lemon in cavity
- Gently stretch wings & drumsticks away from the body to loosen joints.
- Tie drumsticks together with a rubber band.
- Combine tomato, soy sauce & garlic mixing on speed 7 for 5 secs. Using a pastry brush, baste each side of the chicken generously with sauce.
- Place the chicken in the varoma base the add the green apple around If any sauce left pour on top of chicken.
- Cook on Varoma temp speed 1 for 60mins. You may need more cooking time for larger chicken. Please check.
- Remove chicken from Varoma & allow to stand in Thermoserver for 10 minutes.
- Add cornflour to the remaining liquid cooking for approx 8 mins on 90 degrees speed 4 (amount of cornflour & cooking time will depend on the amount of liquid remain.
- The chicken is nice to have with roast vegetables that have been par cooked in Varoma then roasted in oven.

Tip
If you would like to par cook your potatoes/carrots for roasting you can add to the steaming basket in step 6/7. Then you can add other vegetables in the last 15 minutes.
If you are using the TM31 suggested chicken size 1.2kg. For TM5 I used a 2.7kg - this was the max I would go.
Water - I used 1ltr & still had plenty of liquid left. If unsure check after 30 minutes to be sure.

We loved this recipe - I am about to make it for the second time this week! The gravy was amazing, we had some leftover and it was great the next day. The chicken was incredibly moist and cooked to perfection. I used some of the cooked Apple In the gravy.

I used two small chickens in
I used two small chickens in the varoma with sweet potatoes, zuchini, onions and carrots. I also cooked potatoes in the steamer basket. The chickens cooked within 40mins (checked with a thermometer). I added the veg to a pan with hot oil for 20 mins to get crisp and also browned the chicken. I reduced the sauce whilst this was happening and it was delicious. Who knew steamed chicken could taste so good? Really moist. Thank you for the recipe. Next time I will probabally reduce the amount of water as I didn't cook for as long as suggested so the sauce was runnier than I usually like.

This dish was my first-ever
This dish was my first-ever attempt at cooking a whole chicken. It was superb! The meat was delicious and moist and tender. The left-over water and drippings in the jug made a yummy gravy. The only complaint that I had was that we weren't able to crisp the skin up in the oven, as it's not working at the moment. Definitely a keeper!
