  • Dough Ingredients
  • 200 g Milk
  • 1 egg
  • 2 tbsp olive oil
  • 150 gGreek style plain yoghurt
  • 2 tsp yeast
  • 600 g bakers flour
  • ½ tsp baking powder
  • 1 tsp sugar
  • ½ tsp salt
  • Filling Ingredients
  • 150 gmixed cheese cubed (Parmesan, mozzarella, cheddar)
  • Handful mint
  • Handful Italian parsley
  • Baby spinach to taste
  • Olive oil to taste
  • 5 cloves garlic
  • 1 onion, peeled and quartered
  • 250 gbeef, chicken or lamb cubed
  • 1 tbsp plain flour
  • Salt and pepper to taste
  • Juice 1 lemon
  • 250 g feta crumbled
  • A few lemon wedges slice Kalamata Olives, chopped herbs to garnish

Recipe's preparation

  1. Dough Method

    Combine milk, egg, oil, yoghurt and yeast in TM bowl and blend for 4 seconds on speed 6.

    Warm for 3 minutes at 50ºC on speed 2.

    Add remaining ingredients and with dial set to Closed lidclosed lid position, knead for 2 minutes on Interval speedDough mode.

    Add more warm milk if dough does not come together easily. Turn onto floured ThermoMat, wrap and allow to prove for at least 30 minutes.

    Divide into at least 16 even sized balls and set aside whilst you make the filling.

    Place cheeses into TM bowl and mill for 6 seconds on speed 9. Set aside.

    Chop herbs and spinach together for 2 seconds on speed 6. Set aside.

    Place oil, garlic, onion and dry spices into TM bowl and chop for 3 seconds on speed 6. Sauté for 3 minutes at Varoma temperature on speed 1.

    Add meat and flour and cook for 8 minutes at 100ºC on speed 1.

    Season with salt and pepper and lemon juice and cook a further 2 minutes at 100ºCon Counter-clockwise operationReverse + speed 2. Set aside to cool slightly. The mixture should be quite dry.

    Assemble Gozleme by rolling out dough balls into circles on ThermoMat and sprinkling with grated cheeses, meat, feta and herb mix over half the dough circle. Fold each over to make a half moon shape and seal edges.

    Fry in oiled hot pan on both sides, with lid in place to speed up cooking time. When golden and fragrant serve immediately with fresh lemon wedges, sliced Kalamata olives and additional chopped mint and parsley as required. These are delicious when cooked on a BBQ.

    Great recipe, I never thought that I could make these, the recipe seems a little bit daunting but as it turned out it was not so difficult. I used leftover BBQ meat. Next time I will be quicker at making them. My dough made 12 Gozleme, but they were large ones. Loved by all the family. Thanks.

    Tasty. Best to have everything prepared, chopped etc then put together. If I made again I would use more than 260gm of meat. We did some in Tefal grill and others in the frying pan. The pan ones got the best vote.

    My husband got stuck in a traffic jam for three hours and was thrilled to have this for dinner when he got home - just like our local farmers market. And the kids loved it too! I added corriander, cumin and paprika as suggested along with baby spinach. I also used mince meat. Will make again.

    Delicious!  Fantastic recipe but..... I did make a little adjustment. I used 500g lamb mince and added 1 tablespoon ground cumin, and1 tablespoon ground corriander. I am going to buy 'sumac' which is also meant to be a must in this type of recipe (add about a tablespoon). A good teaspoon of salt is a must too. Love it!

    Delicious recipe but I wish I read all the comments first! I was very confused by the "add dry spices" instruction as there were no dry spices listed. I took this to mean salt and pepper but then that was added later. I also was a bit lost with the "add baby spinach to taste". Having not made the recipe before, a little guidance would have been nice. I just put in a handful. Making 16 meant they were very small. Maybe they were meant to be mini but I ended up putting 8 circles on top of each other to make big round Gozleme instead of moon shape. This meal took a lot longer than I expected, definitely not 30 minutes as listed as that would only cover the resting time and then there was the assembly and frying to do.

    Thank you. I added a load of spices to the meat and the hubby loved them. The kids had the dough with cheese filling, and then for pudding with chocolate chips filling and ice cream and chocolate sauce and pronounced them a hit!

    Delicious! It was bland until I read the comments about the spices. I used mince instead of cubed mince, I added more silver beet/spinach and used a bit of ricotta and mixed spice in the cheese mix. The whole family loved it.

    Yum! Added the spices as recommended by another reviewer with an authentic lamb tasting filling as a result. The dough was very easy to make.

    Next time i would add only a tablespoon of mint leaves as this flavour overwhelmed the mixture and add more spinach instead. As this made such a large quantity (16), there were plenty of leftovers for lunches the next day and these reheat very well in the oven or microwave. Will make again!

    the dry spices are abt 1/2-1 tsp each of paprika, cumin and coriander. I made this tonight from a booklet called "Budget Busters".  The recipe is otherwise identical, so I'm thinking it was just a typo that they aren't listed above.  Worth putting the spices in, end result was fantastic!

    I have to say I am a little disappointed with this recipe. I dont like mint so put 1/4 of the amount in and both my hubby and I thought it was way to strong tasting so I made up another batch of just parsley and spinach. I also found the filling mix to be really sloppy? However didnt seem to affect finish product. My kids loved it though!

    Thank you for this recipie - we really enjoyed it.  Even with yeast that (as it turned out) was slightly past its used by date (actually - very past it!) the dough turned out beautifully - like a bread/crepe hybrid.  I handed over 'assembly' to the massess once the dough balls were ready to roll out - and the fillings ranged from 'organic vegetable mince'  to TM Mashed Potato with feta cheese and tuna.  Great Sunday night meal - will definitely do again!
