  • 60g Parmesan cheese
  • 25g cashews
  • 80g fresh basil
  • 120g light olive oil
  • Pinch salt

Orzo & Sweetcorn

  • 250g orzo Pasta
  • 3 cobs sweetcorn
  • 1 telegraph cucumber (cubed)
  • 200g cold smoked salmon
  • 1200g water
  • sour cream to serve

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Basil Pesto
  1. Place Parmesan into TM bowl and grate 15 sec/ speed 9

    Add cashews, basil leaves, olive oil, salt and blend 20seconds / speed 7

    Set aside

     

     

  2. Orzo & Sweetcorn

    Place 1200 water in TM Bowl

    Place cobs of corn in Varoma tray

    Cook 10 minutes/ Speed 3/ Varoma

    Place Orzo Pasta in TM basket and replace Varoma tray. Continue to cook sweetcorn and Pasta for 8 minutes/ Speed 3/ Varoma

    Stir basil pesto through pasta

    Slice corn off the cob and stir through

    Toss through Cucumber

    Sprinkle over Cold Smoked Salmon

Tip

I have included this in an Easter  recipe as at this time of year Basil, sweetcorn and cucumber are plentiful. The ideal combination with Salmon which is traditionally eaten at Easter

Serve with a dollop of sour cream

As a vegetarian option omit smoked salmon

Serve also with grilled chicken as part of a shared plate
