Butter chicken
- 4 tbsp Coconut Oil or Ghee
- 1 onion, Large (halved)
- 4 cloves garlic
- 2 tsp garam masala
- 1 tsp ground cardamom
- 1 tsp Ground Coriander
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1-2 pinches cayenne pepper, (optional)
- 1 tsp ground tumeric
- 3 tbsp tomato paste
- 1 tsp sea salt
- 2 tbsp lemon juice
- 1 can coconut cream, 400ml
- 700 g Chicken thigh fillets, cut into large chunks (can use up to 1kg)
- 1 bunches coriander leaves, to serve
Cauliflower Rice
- 500 grams cauliflower, (broken into florets)
- 500 grams water

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- ***would highly recommend using the cashews to thicken the sauce. Add 100g to your bowl, mill for 10 eed 9, then set aside. When dish is finished, add cashews and let sit for about 5 mins***
I have started to add an extra dose of spices and am really liking that version, add another half portion to the original recipe (1.5 tsp cumin instead of 1 etc). I have also been adding a tsp of cinnamon. - Add onion to the bowl and chop 5 secs/ sp 4
Add 2 tbs of the coconut oil - Saute 4 min/120 deg / "Gentle stir setting" / MC off
Add garlic, chop 3 sec/ sp 7/ MC on
Add all spices & saute 2min/100 deg/ "Gentle stir setting" / MC off
Add the tomato paste & cook 1min/120deg/ "Gentle stir setting" / MC off
Add salt, lemon juice, coconut cream and remaining coconut oil- mix 3 sec/"Counter-clockwise operation" /sp 3/ MC off
Cook for 5 min/ 80 deg/ "Counter-clockwise operation" /sp 1/ MC off
Add chicken, cook 11 mins/100 deg/"Counter-clockwise operation" /"Gentle stir setting" / MC on
Check chicken is cooked through & garnish with coriander and serve with cauliflower rice.
If using milled cashews stir through and sit for 5 mins prior to serving (or while you make the cauli rice)

Tip
***If you would like to have a thicker sauce, mill 100g of raw cashews at the beginning of the recipe, set aside and add at the end, stirring through with spatula.
***You can easily add up to 1kg of chicken thighs to this recipe!
*** This is delicious served with a dollop of coyo or Greek/natural yoghurt if able to have dairy.

We love this recipe, have been making for quite some time, we can't use onion or garlic due to family members dietary requirements, and has still amazing flavour. Sarah.Speerstra: I've never had that problem with it being grainy but I don't use almond meal, only cashews that I milled myself to a very fine consistency so that would be why. I do love the Skinnymixers butter chicken but can't be bothered wil all the steps! I don't think it would have a patch on the traditional recipes you would have had growing up, perhaps you can tweak the recipes to use the ingredients you normally eat?

I’ve been making this since 2015 (which I originally gave it a 5 star rating), but I have to ask has an amendment been made in the recipe recently? Because it’s gone from a 5 star rating to a 2/3.
I like how milling the cashews has moved up the top, but I personally would not add cinnamon again. Maybe it was the adding of this spice that has changed it?!
I will try again without the cinnamon and fingers crossed we have the old recipe back.

Sorry but thos was Absolutely awful! If i could give no star I would. Followed everyone's suggestions, still found it too runny with (I put almond meal) spices were not cooked through enough, very grainy and pastey and bland. Does not taste like butter chicken. I'm half Indian and was brought up on the stuff I should know. Skinny is much better. Very disappointed.

I am a health-conscious mum with a 1&3.5yr old and all my recipes are tailored to them, i minimise sugar, salt etc.. where possible and all additives .. i tried this today, not expecting it to pack the flavour .. my gosh love that i was wrong; tasty, easy, quick, and worth full stars.
Hubby and i loved the cauli rice, kids (well 3 yr old) not so much lucky i had some brown rice on hand for toddler.
TWEAKS or my exact measurements:
1kg chicken thighs cut in 3cm die (thighs have double the amount of iron and zinc as breast meat)
used a 50/50% combination of coconut oil & ghee (to another reviewers comments)
as per recipe tweak, used 1.5 tsp of most spices (& used cayenne etc.. i was comscious of heat but there is none, just flavour so dont be scared to for kids!)
used fresh ginger
Cooked chicken for the specified time but then (as to another reviewers comments) i transferred it to a cast iron pot and let it simmer for another hr before serving (manly because i like to cook in advance for kids as it all can get chaotic-quickly)
oh and i did throw in a raw zucchini into batons when i transferred to the stove and cooked through,
*in the babies serve i added a dash of milk upon serving to creamy it up and dull any heat

This was a terrible disappointment. I thought being a Pete Evans creation it would be full of flavour. I followed the recipe exactly. Firstly I could taste raw spice flavour which was a bit off putting it needed to be cooked longer at the spice adding stage. Overall I was in his words completely underwhelmed. There are so many good reviews so I'm wondering what could have gone wrong or if I'm just way too fussy. Back to Skinnymixers for me.

Excellent recipe, even my 3 year old sought he was eating rice!!! I also added 50% more spices, no coriander as I didn't have any, added to cashews and used 750g of cauliflowe. I extended my chicken cooking time by 10mins as I had 1.1kg and cooked my cauliflower for 15mins. Everyone loved it!

This is one of my families favourite recipe from Petes Family Food cookbook. I followed the recipe as written and I found the liquid didnt reduce, so I did add about 3/4 cup of grounded cashews as suggested, but it was still runny and didnt want to add more because I was worried about overpowering the recipe. I will play around and remake this recipe often, then report back. Thank you for translate this recipe to Thermomix talk.. )

Unbelievable flavour (I did add an extra 50% of each of the spices as other reviewers mentioned) I milled the cashews to thicken the sauce and used 1kg of Chicken breast. I love Skinnymixer recipes but this is so much quicker, easier and tastier by far. No washing out of the bowl is a bonus! Never cooking another BC recipe again after many years of experimentation... I'm in love!

A little bland, but the kids liked it. I omitted the cayenne, so maybe thats why. Certainly much quicker than the Skinnymixers recipe, which is a plus. Will try it again, with more chicken next time, as there is plenty of sauce.

If I could give this recipe 6 stars, I would. Absolutely amazing. I made it as per the recipe, including the cashews (but without the coriander as I didn't have any), oh and I used cardamom pods instead of ground cardamom and fresh ginger instead of ground ginger. Had to keep telling myself to slow down while eating it - I just wanted to inhale it, it's so good! I served it with the cauliflower rice, and peas. No need to ever buy takeaway butter chicken again.

Lovely dish. Very easy to make and tasty. I used heaped spoons of all the spices. I added the cashews for extra thickness. I did have to cook 5 minutes longer as maybe my chicken was quite chunky.
I made this again and added another heaped teaspoon of all the spices and an extra tbs of tomato paste. 850g chicken and thickened with almond meal. I then cooked rice and other vegetables in the varoma and served it with a cucumber / yoghurt with a dash of garlic. yum!

Best butter chicken we have ever tasted! So easy, quick and healthy. I used 1kg of chicken and there was still loads of sauce. I also cooked it for 20 minutes. Will add cashews to thicken it up next time.
