Noodle and beef
- 500-600 g Fresh rice noodles
- 400 g Beef, Eye fillet, tenderloin or another lean, tender cut
Stock
- 3 centimetres ginger, Peeled
- 2 cloves garlic, Peeled
- 1 brown onion, Halved
- 10 g Pho spice (unground), Star anise, cinnamon quill, cardamon pod, fennel seeds, coriander seeds
- 15 g sugar
- 40 g fish sauce
- 2 tablespoons TMX Beef Stock Paste
- 1500 g water
Herbs
- 200 g bean sprouts
- 4 sprigs Asian coriander
- 1 sprig spring onion
- 4 sprigs thai basil
- 1/2 lemon or lime

Recipe's preparation
Place ginger and garlic into mixing bowl and chop 3sec/speed7.
Add onion then chop 2sec/speed5.
Add pho spice, sugar, fish sauce, stock, stock cubes and water. Cook on Varoma/30mins/Reverse/Speed2
While broth is cooking, prepare noodles by rinsing noodles in boiling water in the thermoserver, then drain. Keep warm in the thermoserver.
Thinly slice beef and lay evenly on top of the noodles.
Wash and dry bean sprouts and all remaining ingredients. Cut lemon/lime into wedges. Arrange all this on a serving platter for the table.
Pour cooked stock, via the thermobasket to strain out solids and spices, into the thermoserver containing the noodles and raw beef. The hot broth will cook the beef (you way want to stand it with the thermoserver lid on for 5mins).
Serve communal pho at the table accompanied by fresh herbs and lemon wedges.

Asian beef balls can be added to the broth 5mins before the broth is completed. This adds texture and extra protien!
For lower carbs and higher protein, reduce rice noodles and replace with bean sprouts, increase beef and add beef balls and/or shredded steamed chicken.
A typical dipping sauce for the beef would be Hoisin, chilli sauce and chilli oil sauce.

I've made this recipe so many times. I've used the soup base for dumplings and meatballs. I usually add a chopped chilli and 30ml of lime juice for even more flavour. I recommend using your own stock for an amazing meal but for a quick and easy meal there is no need.

This recipe was absolutely delicious! I didn't include the star anise as I didnt have any, but it was still very much like the real pho you get in Vietnam - but saving a few hours on the stock preparation! Will definitely be making this a staple in our household.

I'm glad you enjoyed it! And using your own beef stock would be much better... I'm just lazy! We cook this recipe at least once a week And we hardly go out for pho anymore because I can cook this up in half an hour. Apart from the salt content and as long as you don't have too much noodle (replace with Veggies ++), it's a great healthy low fat, high protein and low GI meal. Great post workout food and its traditionally enjoyed Afro breakfast lunch or dinner!

I finally cooked this and it was DELICIOUS! I did what you recommended in your comment and made up the portions of spices for the pho spice. This will definitely be cooked again and again and again. We used home made beef broth. Thanks for the recipe
I usually use 1/2 to 1
I usually use 1/2 to 1 cinnamon quill, 3 star anise, 1 cardamon pod, and then the rest of the 10g made up of equal parts of the cloves and seeds. I would recommend visiting an Asian grocer and simply buying a packet of (unground) 'Pho Spice' containing a mixture of all the above. About $2.50 and it'll last for 4-5 times. Google 'pho spice packet' and take a look at some of the pictures to see what I mean.
