Proscuitto Wrapped Chicken Loaf with Orange Sauce and Spring Vegetables

Ingredients

6 portion(s)

Chicken Loaf

  • small bunch parsley, rinsed
  • small bunch basil, rinsed
  • 3 cloves garlic, peeled
  • Zest of half a lemon, taken from lemon with peeler
  • 1 --- onion, peeled & halved
  • 20 grams olive oil
  • 600 chicken breast, 4cm chunks
  • --- salt
  • --- pepper
  • 1 --- egg
  • 8 slices prosciutto, layed side by side on small strip of baking paper
  • 800 warm water

Spring Vegetables

  • 3 potatoes, peeled washed cut into 5cm cubes
  • 2 carrots, chopped into 1cm rings
  • half head of broccoli florets, rinsed and separated evenly
  • 200 grams brussel sprouts, halved

Orange Sauce

  • remaining cooking liquid
  • 35 grams plain flour
  • 1 heaped tablespoon TM stock concentrate (to taste)
  • 1 rind and juice of 1 orange

Recipe's preparation

    Chicken Loaf
  1. When the timer is finished check that the chicken loaf is cooked through and that all the vegetables are cooked to desired stage.

    Remove all of the above from the Thermomix and set aside.

    Add orange juice, flour and stock concentrate to the remaining steaming liquor in the Thermomix Bowl.

    Set to cook 4 minutes 90deg sp 4

    Serve

    Made the meatloaf with steamed veggies & served it with bbq sauce. Very nice & certainly would try it again. A bit confusing without the steps for preparation

    I don't understand this recipe, seems that it's missing a few steps? The title sounds like it would be a lovely meal but the recipe seems to be missing steps but repeats the same step more than once. Umm I know this was posted a while ago but if its possible for thermogirl to correct this I would be grateful, as It sounds like it uses the varoma and I want to use it more! Thanks in advance
