Shortcrust pastry
- 150 g Butter, Cubed
- 300 g plain flour
- 1 tsp salt
- 100 g water

- 1 onion, halved

- 10 g chives, finely chopped
- 6 eggs
- 100 g Milk
- 130 g cream

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Put butter, flour, salt and water in mixing bowl and mix 30 sec/speed 4, or until dough starts to come together.
2. Transfer to thermomat and work dough into a smooth ball. Be careful not to overwork it.
3. Roll out using a rolling pin until your desired thickness (approx 5mm)
4. Line a quiche tin with the pastry, and let rest in fridge for 20-30mins.
5. Preheat oven to 180c
While the pastry is baking, prepare the filling:
8. Put carrot into mixing bowl (cut into 3) and chop 4 sec/speed 5
9. Add zuchinni (cut into 3) and chop 4 sec/speed 5, transfer to a bowl and set asied
10. Put onion in mixing bowl, and chop 3 sec/speed 5
11. Add oil and saute 3 min/100/"Counter-clockwise operation" speed 1
12. Add bacon and vegetables to mixing bowl, and cook 3 min/120/"Gentle stir setting" . Add chives and give a quick stir with spatula. Drain excess liquid with aid of simmering basket.
13. Spread evenly over the blind baked pastry.

Tip
If you have any leftover bacon mixture and egg mixture, I use a silicone muffin pan to make crustless quiches for the kids lunch boxes!

Absolutely delicious. Pastry was really tasty Added 10 halved cherry tomatoes, 6 stalks asparagus, used a red onion I had and 7 eggs by mistake. Used light tasty cheese. Cooked for 10 mins longer. I'll be making this again.

I used filo pastry. Capsicum instead of zucchini. Sweet potato instead of carrot. Fresh sweetcorn cut from the cob, mushroom. Half the bacon. 1/2 leftover sausage. Really good - added 1/2 cup flour as suggested by someone else. Cooked for 3/4hr. Delicious.

I have always had trouble making a decent quiche - but this one was absolutely awesome. The crust was lovely and buttery. I added mushrooms and red and green capsicum. Only reason there was some left over was because I wanted it for school lunches tomorrow.

This was nice. Would be easier to put everything that needs chopping into the bowl, chop, cook a little then put in the liquids, mix, pour into the cooked pastry shell and then cook the quiche.

Looks great, just making now and ive noticed it doesnt say to add cream in anywhere but its in the ingredients list? Have I missed it? Also how do you gwt your quiche pastry to look so perfect in the dish before blind baking?

Made this sans pastry and everyone loved it. Followed the recipe, apart from adding 1 garlic clove to the onion, using only 100g bacon, spring onion instead of chives (had no chives) and a handful of baby spinach scattered over prior to sprinkling on cheese.

Brilliant thank you. I'm only adding my cooking variations so I remember for next time. I have a VERY HOT Smeg oven and the cooking time had to be changed To 150deg for 45 minutes. Thanks again

Awesome thanks! My tweaks so I remember for next time.... Were I used the pastry base from the BCB from the TM5 which is essentially the same with no blind baking required. I used 50 gms of grated tasty & 50 gms of grated swiss cheese 10 secs speed 9. Then I used 3 garlic cloves & 1 smalI onion 10 secs speed 9 & sauteed 3mins 100 degrees on speed 1. I used 200gms of bacon (all I had) & pan fried that to get crispy. I used 1/2 a small zucchini, large handful of baby spinach zapped 10 secs speed 9 & then used the simmering basket to get all the water out of the vegies. Next time I will add some mushrooms & carrot. I added the tasty cheese to the egg mixture & I put the swiss cheese on top before baking. It took around 30 mins at 180 degrees.....
