Shredded Chicken Rice Noodle Salad

  • 3 chicken breasts
  • 200 grams thin rice noodles
  • 100 grams bean sprouts, fresh
  • 1/2 cup of coriander leaves and stalks
  • 80 grams roasted peanuts or cashews
  • 1 cup of mint leaves

Nuoc Cham Dressing

  • 2 red chillies cut in half
  • 4 cloves garlic
  • 3 tablespoons caster sugar
  • 1 1/2 tablespoons fish sauce
  • 6 tablespoons fresh lime juice or lemon juice

Recipe's preparation

    Shredded Chicken Rice Noodle Salad
  1. Cut chicken breasts into  thirds and place in Varoma dish and tray. Put 1.5 litres of water into TM Bowl and place Varoma on top. Cook for 12-15mins( depending on size of breasts ) on varoma Temperature speed 2. Remove varoma tray and allow chicken to cool slightly while noodles cook.

    Break  noodles into half,  so that they are more managable and place into TM Bowl. Cook on 100 Degrees, Counter-clockwise operationGentle stir setting for 3 mins

    Drain in varoma tray.

    Place chicken in TM Bowl and shred onCounter-clockwise operation speed 4 for 4 seconds

  2. Place all ingredients in a large bowl and mix through with hands.  Arrange on a large platter and pour dressing over and then roasted peanuts.

  3. Nuoc Cham Dressing
  4. Place halved chillies  and garlic into TM Bowl and chop on speed 7 for 5 secs

    Add remainder of ingredients and mix on speed 2 for 5 secs.

    Pour into jar and allow to stand to dissolve sugar and develop flavours.

Tip

This is a really refreshing salad.  You can add many other ingredients.  Such as grated carrots, shredded green mango, schallots etc.

    We all loved this one! Served all 5 of us with enough leftover for me to take for lunch tomorrow. I did add some julienned carrorts for some added veg factor.


    I made the dressing first and didn't wash the bowl - worked just fine.

    This was Amazing!!!! We added red capsicum and used the vege twister to make carrot noodles! This will now be made frequently in our house for lunches and snacks. You can also use this recipe add your Rice Paper Rolls or Veitnamese Rolls filling! Thankyou!

    What a delicioud salad! I love the flavour combination. I doubled the sauce and herbs and also added shredded carrot and cucumber. This dish is great as a share platter as it has an impressive presentation and you can get lots of servings from it.

    Thank you for sharing fabulous! Tweeked just a tad added finely diced cucumber instead of bean shoots as the bean shoots at the supermarket weren't looking very good. Also with the dressing added a whack of seasame oil and a combination of both palm sugar and coconut sugar instead of the caster sugar also a smidge of soy! This will be a regular in our house thank you

    I made this for a Christmas salad and it was delicious. I think I used too much chicken because I interpreted "3 breasts" as 3 full breasts which was just over 1kg - it took quite a while to cook so maybe 1/2 kg (3 1/2 breasts) was the correct amount.  But it didn't seem to overpower the rest of the dish at all.  Next time I make it (and I will) I'll make extra dressing... I had to keep the dressing "on the side" so the kids would eat the salad (they're not good with chili at all) and we ran out... it was so good.  Agree with other posters that the chicken shredding method is great! Thank you for sharing the recipe.   Big Smile

    Thanks Kate. I usually have a large jar of this dressing in my fridge, but yes, you could definately make it before the steaming process.  I personally prefer breasts shredded in salads etc.  i use thighs for curries and casseroles though.
