Silverbeet (Spinach) and Egg Pie

  • 300 grams frozen mixed vege
  • 1 bunch fresh silverbeet, chopped (excluding white stalk)
  • 2 brown onions, quartered
  • 2 clove garlic
  • 6 sprigs parsley
  • 2 zucchini, roughly chopped
  • 2 carrots, roughly chopped
  • 1 heaped tablespoon TM Veg Stock Concentrate
  • 6 rindles bacon rashes, roughly chopped
  • 12 eggs
  • 500 gram Milk
  • salt and pepper to taste
  • 200 grams Self Raising Flour
  • 180 - 200 grams Grated cheese for topping

Recipe's preparation

  1. preheat oven to 200c

    grease a lamington size baking tray

  2. Place silverbeet and frozen mixed veg  into the baking tray

    Add garlic and onion to mixing bowl chop 3 sec / speed 7

    Add carrot and zucchini chop 4 sces / speed 7

    Add oil, veg stock  and bacon and saute 5mins / varoma / speed 1

    Add this to baking dish with spinach

    No need to rinse bowl Add milk,eggs, salt, pepper and flour blend for 25 secs / speed 2

  3. Pour the egg mixture over spinach and fold through

  4. top with grated cheese

  5. bake  in the oven for approx 45 - 60mins, until cooked through and chees is golden brown on top

    This was very well accepted in our house, everyone loved it. I added some chilli powder, small diced tomatoes & capsicum & some cooked brown rice. I found it mushed the carrot & zucchini, so I might chop it less next time. I made it in my big bessemer baking dish as well as a smaller glass dish for my gluten free and dairy free version ( Quirky Jo's GF flour mix with baking powder and used almond milk & goats cheese grated on top, no bacon ) so it's a BIG serve. I did use a BIG bunch of silverbeet! served with salad & it was yummo! Froze some after cooking mine and it warms up perfectly.

    This was delicious, I substituted the bacon for broccoli as a vegetarian alternative and it was fine.i gave the flour, egg and milk mixture longer than recommended as it was not mixed enough. My family loved it!
