Steamed eggs with chilli beans

Ingredients

2 portion(s)

  • 4 eggs
  • 1 rasher shortcut bacon
  • 4 cm spring onion
  • 2 clove garlic
  • 1 small piece dried chillies
  • 3 tomatoes, quartered
  • 1 teaspoon Vegetable stock paste
  • 5 g oil
  • 1 can Berlotti Beans, drained and rinsed

Recipe's preparation

  1. Chop onion, bacon, garlic cloves and chilli on speed 6 for 5 seconds. Scrape down sides, add oil, sauté for 4 minutes on 100 degrees, speed 1. 

    Add tomatoes and chop for 2 seconds, speed 6 then add vegetable stock paste. Put your lid on and bottom varoma tray in place. Place 2 silicone cupcake moulds in the tray and crack an egg into each one. Put your Varoma lid on and steam, Varoma temp, Counter-clockwise operation speed 2 for 10 minutes.

    Once cooked, tip your beans into your tomato base and stir on Counter-clockwise operation for 5 seconds, or until combined. Serve hot.
