  • 2 stalks Celery, Washed and chopped
  • 3 carrots, Washed and chopped
  • 1 zucchini, Washed and chopped
  • 1 onion, Peeled and halved
  • 2 tomatoes, Washed and chopped in half
  • 1 bunch parsley, Washed
  • 1 sprig rosemary, Washed
  • 1 dried bay leaf
  • 160 gm rock salt
  • 4 tablespoon olive oil

Recipe's preparation

    Vegetable stock
  1.  

    Method Place all vegetables and herbs in bowl ... Chop 10 sec/ speed 6.

     

  2. Add salt and 1 tablespoon only of oil. Cook 20 minutes varoma 20 mins /varoma speed 1 Blend 1min speed 4 increase to 9 Needs to be a smooth texture . Place into jars cover with remaining olive oil Store in fridge

Tip

You can use any vegetables you have left over.

If you have leftover vegies, store in freezer ready for you when you need to make more stock!

    great recipe. i always halve the salt as i find it to strong. also if you put them in ice cube trays and place in the freezer they are perfect portions and easy when your in a rush

    I can't see why not if you keep it topped up with oil and use it fairly quickly .I would recommend getting hold of some jars for next time .

    Like most people I made this during my delivery demo. Most of the recipes that I’ve made since haven’t called for it, but it does add some nice flavour to dishes.

    I would never waste parsley leaves in a stock - pick the leaves off for other uses and just make the stock with the stalks.
