Ingredients

  • 500 grams potatoes, Washed, peeled and roughly chopped
  • 250 grams parsnips (peeled and cubed, 1cm)
  • 250 grams carrots, Peeled and chopped into 1cm rings
  • 1 large leek, Washed and sliced into 1cm rings
  • 230 grams Milk
  • 1 teaspoon vegetable stock, Powdered or home made
  • 40 grams Butter, Chopped
  • salt and pepper to taste
  • 1 heaped tablespoon chopped parsley to garnish

Recipe's preparation

    Method
  1. 1. Add all ingredients (except for the butter, S&P, and parsley) to the Closed lid

    2. Set to 100C, 25 minutes, sp 1, MC on. If it starts to splutter a lot, remove MC, replace with steamer basket and reduce temp to 90c. When a lot of the liquid has been reduced you can increase the temp back to 100C if you wish.

    3. Cook until everything is nice and soft.

    4. Add butter, S&P, to bowl and blitz sp 4/ Counter-clockwise operation, for about 15 seconds or until it's the consistency you like. Don't over blend or it will be gluey.

Tip

This was made regularly in my home when I as a child. But in those days my dear Mum didn't have a Thermomix ..!

it was always delicious. Served as a meal on itsown with a poached egg n top and steamed beans on the side. And a glass of milk on the side..

But just as delicious as a side dish with any meats.

Just make sure you blend it on reverse speed.

I prefer it slightly chunky, but small children/babies or the elderly may like it smoother..

    I didn't have parsnips or leeks so made up the missing quantities with sweet potatoes, and it came out really well. 1, 6 and 8 year olds all ate it happily, and the parents! Thank you!
