Asparagus, Chickpea and Brown Rice Salad with Tahini dressing

Ingredients

4 portion(s)

Salad

  • 3 tablespoons olive oil
  • 2 cans Chickpeas, drained
  • 2 cloves garlic, chopped
  • 1 brown onion, chopped
  • 1 bunch asparagus
  • 400 g brown rice
  • 125 g slivered almonds, toasted
  • 900 g water
  • Sea salt to taste

Tahini Dressing

  • 1 clove garlic, peeled
  • 70 g tahini
  • 1 lemon, zest of
  • 40 g lemon juice
  • 35 g extra virgin olive oil
  • 40 g hot water
  • 1/2 teaspoon sea salt flakes

Recipe's preparation

    Salad
  1. Place rice in simmer basket and water in TM bowl. Cook for 30-35 minutes on Varoma temperature at speed 4. 

  2. Place the asparagus spears into the varoma and when the rice has 7 minutes left of cooking time, put the varoma in place to steam the aspargus. You can adjust the steaming time depending on how firm or soft you like the asparagus.

  3. Just before the rice has finished, heat the olive oil in a frypan over medium-high heat on the stove. Then add the chickpeas and a sprinkling of sea salt. Saute the chickpeas for a couple of minutes or until they get some crusty colour on them. Add the garlic and the onions and saute for a couple of minutes or until the onion has softened.

  4. Add the cooked rice, asparagus, toasted almonds (reserving some for a garnish) and a sprinkle more of sea salt and stir to combine. Taste and add more salt if desired.

  5. Tahini Dressing
  6. Place all the ingredients for the dressing in the TM bowl and blitz on speed 7 for 10-15 seconds. Drizzle a little of the tahini dressing over the salad and serve the remainder beside the salad and let each person add more dressing to suit their taste.

    I made this to have as a side instead of a main so I halved everything except for the asparagus as I wanted extra veg & added 2 handfuls of chopped baby spinach at the end. Delish!

    There was a lot if rice in this recipe. I think it needs more vegetables and some spices or seasonings. My sauce was a little thick, perhaps due to quite a thick Tahini. With minor adjustments this would be a lovely salad.

    Thanks for such a wholesome and beautiful recipe. I substituted one of the cans of chick peas for frozen peas, and can imagine making it differently each time. I think toasted pepitas would be great in lieu of the slivered almonds, but  I love the basic concept, and the sauce is delicious.
