Beetroot and feta burger patties

  • 4-5 Raw Beetroots, Peeled, quartered
  • 230 grams rolled oats, or quinoa flakes
  • 1 small onion, halved
  • 2 cloves garlic, peeled
  • 200 grams firm feta (sheeps), or tofu, crumbled
  • 2 eggs, organic or free range
  • 2 tablespoons extra virgin olive oil
  • 1 Handful fresh basil
  • 50 grams raw cashews, or macadamia nuts
  • 1 teaspoon cumin
  • to taste sea salt, pinch
  • to taste cracked pepper

Recipe's preparation

  1. 1. Chop onion and garlic in bowl, 3 sec/Speed 7


    2. Saute, Varoma/3 mins/Speed 1


    3. Place raw beetroot, nuts, basil leaves and cumin into bowl, Chop 3 sec/Speed 5


    4. Add olive oil, eggs, rolled oats (or quinoa flakes), salt and pepper, 3 sec/Speed 4


    5. Add crumbled firm feta (or tofu), 5 sec/Reverse/Speed 2


    6. Use Spatula to finish combining if need be and tip out into a large glass bowl


    7. Use food hygiene gloves if you don't want stained hands, and form 6 to 8 large patties, or more for smaller sized patties


    8. Lightly oil Varoma basket and tray with olive oil and place formed patties into both the basket and tray


    9. Cook, 15-17 mins/Varoma/Speed 4


    10. Can be enjoyed steamed as is, or lightly fry both sides of patties in a pan for more texture


    11. Serve on multi-grain bread rolls or your preferred bread rolls, wraps etc and top with tasty cheese, tomato relish or mayo, lettuce and enjoy!

Tip

I use rolled oats but to make this gluten free you can use quinoa flakes instead

Ensure that a firm feta cheese is used, such as sheep's feta and crumble prior to adding to the ingredients. A soft feta will turn mushy

Instead of feta cheese you could use Tofu

If a smaller quantity is required, just halve the recipe ingredients

    Beetroot NOT crunchy at all when you chop the beetroot in TMX and cook in Varoma basket using Varoma temperature.

    These beetroot and fetta burger patties are so delicious. I made them for lunch today and my husband asked for more!! They are easy to make with only a few ingredients. Very tasty and worth making!!!
