Curried Rice with Cashews
- 250 grams basmati rice
- 3 cloves garlic
- 2 cubes fresh ginger, 2cm x 2cm sized cubes
- 1 cube Fresh Tumeric, 2cm x 2cm sized cubes
- 2 sticks cinnamon
- 8 pods cardamon pods
- 2 tablespoons curry powder
- 1 brown onion
- 30 grams olive oil
- 400 grams Coconut Crema
- 300 grams water
- 2 tablespoons vegetable stock, Every Day Cookbook
- 75 grams sultanas
- 100 grams Salted Cashews
Serve
- 1 bunch baby spinach
- 1 cucumber, Diced
- yoghurt, (Optional)

Recipe's preparation
Soak Rice in a bowl of water.
Place garlic, ginger, tumeric, cinnamon, cardamon and curry powder in TM bowl, 45 seconds, Speed 9.
Add onion and chop 4 seconds, Speed 7.
Add oil and saute 3 minutes, Varoma, Speed 1.
Drain rice and add to TM bowl with coconut cream, water, stock, sultanas and cashews. Cook for 10 minutes, Varoma, Speed 1.
Place rice in Thermoserver lined with baby spinach.
Let stand in Thermoserver with lid on for 10-15 minutes.
Serve with wedges of lime, diced cucumber and youghurt.

Quite a tasty & strong receipe. We had it for dinner following the receipe, and found that without meat or other dish, its a bit much. Definitely get onto having some meat with it, we had beef with it the next day & it was great!

Really enjoyed this dish - yes it has a bit of a kick, but that's the way we like it! Topped off with cucumber yoghurt = super delicious.

I came across this recipe by chance when all I seemed to have was basmati rice and chicken as staple ingredients. It was very tasty ( I also reduced the spices to make it kid friendly) and also added some chickpeas. Will definitely be making this again . Thank you
