For the curry
- 1 Brown onion1
- 2 cm ginger
- 1-2 tablespoons Cumin Seeds Whole
- 1-2 tablespoons curry powder
- 1-2 teaspoons tumeric powder
- 1-2 teaspoons cinnamon powder
Step two
- 800g Vegetables, I used cauliflower, broccoli capsicum and red cabbage
- A handful of almonds
- A handful of cashews
- 1 can of coconut milk
- 1/2 can water
- 140ml can tomato paste
- juice of 1/2 lemon
- Juice of 1/2 Lime
- salt to taste
- 1 tbsp coconut oil
- 1 can of chickpeas

- A handful of cashews
- 1 can of coconut milk
- 1/2 can water

Recipe's preparation
Put onion, ginger, cumin seeds, curry powder, turmeric and cinnamon into bowl.
Mill 3sec/speed 7
Add in coconut oil and saute 3mins/Varoma/speed 1
Add in all other ingredients except the chickpeas and cook
20mins/100C/reverse/speed 1
Put drained and rinsed can of chickpeas in Thermoserver and pour curry on top. Carefully mix through until well combined.
Serve with rice and fresh coriander

A simple delicious meal. I really liked the chickpeas. I used zucchini, pumpkin, cauliflower, carrot, broccoli and beans. I omitted the half a can of water because I prefer a thicker consistency. I will definitely cook this again.

It was relatively easy to make but the spices were completely out of balance. I had to add the tiniest bit of sugar and then a big dollop of yoghurt the make it more palatable. Not sure what the nuts were about. They didn't seem to fit in this recipe. I won't be making it again - there are better thermo vege curry recipes!

This was amazing and so easy. I cut my vegetables (sweet potato, cauliflower, broccoli, beans, pumpkin and zucchini) into bite sized chunks a steamed them to avoid over cooking. otherwise I followed the recipe and just poured the sauce over the steamed veg. Highly recommend this recipe - thank you.

Loved this! Used Thermomix curry powder. Used veggies I had, cauliflower, zucchini, pumpkin, sweet potato and broccoli. Served with tikka chicken from the Indian Thermomix book. Fantastic meal in a short time. Cashews and almonds made the difference. I didn't have lemon so just used lime juice.

Delicious even though I deviated from the recipe!
I made half quantity and used vegetables that were already in the fridge and needed to be used - pumpkin, zucchini, carrot, red capsicum. Rather than open a can of coconut milk to use only half quantity,I used up the coconut oil (solidified - 1/4 cup) that I had previously made in the thermomix and was a textured with bits of coconut pulp. I added a teaspoon of Massels chicken style stock powder to the water. I included one small handful of salted cashews.
I cooked it for 16minutes/reverse/soft spoon, and of course the pumpkin had gone mushy but the flavour is fantastic. Thanks for the recipe.

very easy and very nice vegetable curry. I'll use a little less lemon next time as my 9 year old didn't like the slightly sour taste. But a great way to add a vegie dish to the meal.

This was a great dish. I am not a huge fan of curry and I did not find this overpowering. I loved the almonds but next time I will leave out the cashews, I just feel as though they got lost in the dish. Overall very yummy on it's own or as a side. I had mine with silverside. My kids did not like this dish at all.....they are not overly fussy eaters so not sure why. Oh well more for me Thanks for posting.
