I Can't Believe They're Not Meatballs (Vegetarian Meatballs with Tomato Sauce)

Not-Meatballs

  • 140 g Cheddar cheese
  • 100 g cottage cheese, optional but lovely for texture (don't use too much or will make the balls a bit tricky to roll)
  • 100 g Walnuts or Pecans
  • 1 Onion (medium to large)
  • 2 teaspoons dried basil
  • 2 teaspoons Italian mixed herbs, if not available, put in oregano, rosemary, thyme
  • 0.5 teaspoon dried sage
  • 0.5 teaspoon salt
  • 4 eggs
  • 210 grams breadcrumbs, (or make from old bread)
  • 1 can Heinz Creamy Tomato Soup, 400g and add half a can of water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Could probably do this as a 'bang it all in and chop' single step but this also works
  1. Heat oven to 180oC/170oC fan forced

    Make breadcrumbs if you haven't already!

    1. Cut cheese into pieces (2-3cm) and put into mixing bowl with measuring cup inserted. Chop 5 seconds speed 5.

    2. Add walnuts and onion (cut into pieces) and put into mixing bowl with measuring cup inserted. Chop 5 seconds speed 5. Scrape down sides and chop another 5 seconds speed 5.

    3. Add basil, Italian mixed herbs, sage, salt, cottage cheese (optional) and eggs. Mix 5 seconds speed 5 (scrape sides and repeat if not quite mixed enough)

    4. Add breadcrumbs and mix 1 minute, speed 5, reverse direction

    5. Form into balls and put into square/rectangular casserole dish - make size of balls however big you want to be evenly spaced. Protip, use wet hands to roll, much less sticky!

    6. Pour soup over not-meatballs and add a further can of water (rinse the can out) to water it down a bit - its fine to cover the tops of the not-meatballs, they absorb the soup/sauce during cooking.

    7. Cook in oven uncovered for approx 30-40 mins; when the not-meatballs are firm, the tops are brown and the soup/sauce is thickened they they're ready to go.

    Leave to cool for 10 mins before serving (if you can). They taste better the next day but we don't often have leftovers when I make them.

Tip

NOTE: this is a really forgiving recipe in terms of proportions and spices, so long as you get the breadcrumb and onion ratio right (ie: dry enough to make the meatball shape) then throw in whatever looks good. Also adjust the soup/sauce levels to whatever you want - the not-meatballs will hold their shape no matter if they are covered or not.

I take this one with me as a partly-prepped dish when visiting family etc. I chop up all the dry ingredients and herbs and put in a ziplock bag. Once there, mix with 4 eggs, some cottage cheese and shredded cheese and whack on the soup and its a quickly prepared dish.

    Very nice not meatballs however I didn't know which size tomatoe soup to use, I used the large one like I do for Porcupine balls. Adding a large tin of water was way too much for the cooking time. Perhaps next time I will use a large tin I of soup and a half a can of water. Thanks for the recipe.

    Loved them!! My partner and 9yr said they're better than meat Meatballs! I added to cream and Sour cream to my soup and sprinkled cheese and Parmesan cheese on top before baking. Delicious

Sorry I wrote this out when making a batch for someone who was very anti-cottage-cheese - its optional but if you add 100-110g it makes the meatballs very lush in terms of texture - my father-in-law swears they are made of fine beef (I tell him they're not every time!). I've updated the recipe to include - thanks for pointing it out!

    My kids loved these. I’m always try to get them to eat more vegetarian meals. They didn’t realise it wasn’t near until I told them. They still loved them after I told them it wasn’t meat. Will definitely be making again.

    This was delicious!!
    I ended up having it on spaghetti so i added some tinned diced tomatos on too so there was more sauce (but could have been because the size of my tin of soup wasn't large- so may not be needed for everyone). Will definitely make again and again. Thanks !! Smile I agree with the above comment 10/10
