Jambalaya

Ingredients

4 portion(s)

  • 200 g quinoa, soaked overnight and drained well
  • 2 cloves garlic
  • 1 celery stick, roughly chopped
  • ½ red capsicum, roughly chopped
  • ½ green capsicum, roughly chopped
  • 1 carrot, roughly chopped
  • 1 onion, peeled and halved
  • 30 g olive oil
  • 1 Corn cob, kernals removed
  • ½–1 tsp cayenne pepper
  • ½–1 black pepper, freshly ground
  • 1 tsp dried oregano
  • 1 tbsp TM vegetable stock concentrate
  • 300-350 g water
  • parsley, to garnish

Recipe's preparation

  1. Soak quinoa overnight and drain well. Set aside.

  2. Place garlic into mixing bowl and chop 6 sec/speed 7.

  3. Add celery, capsicum, carrot and onion and chop 7 sec/speed 5

  4. Add oil and sauté 2 min/100ºC/speed 1

  5. Insert Butterfly. Add corn kernels, peppers and oregano and cook 2 min/100ºC/counter-clockwise operation/Gentle stir setting.

  6. Add drained quinoa, stock concentrate and 250 g of water and cook for 10 min/Varoma/counter-clockwise operation/Gentle stir setting. Check and add remaining water if desired and cook for a further 10–15 min/100ºC/counter-clockwise operation/Gentle stir setting

  7. Pour into ThermoServer and stir through parsley. Allow to rest for 5-10 minutes before serving to allow the quinoa to soak up the remaining liquid.

Tip

Here are some other delicious variations of Jambalaya you may wish to try.

Bacon

Add chopped bacon or chorizo when you sauté the vegetables in step 2.

Extra Vegetables

Peas, broccoli and sweet potato make good additions and can be added with the corn kernels.

Prawns

Add raw prawns in final 5 minutes of cooking time.

    Aboslutely delicious and super-easy.  I added chorizo and prawns and it was restuarant quality.  A tiny bit too salty for me so I'll just put less stock in next time.  Thank you so much for this great reciple.
