Lemon, Leek & Zucchini Risotto

  • 100g parmesan cheese cubed
  • 2 cloves garlic
  • 1 lemon, zest & juice
  • 1 sprig flat leaf parsley
  • 2 sprigs fresh thyme, or lemon thyme, don't use the woody stems
  • 1 leek washed, & trimmed
  • 40g Butter
  • 20g olive oil
  • 100g white wine
  • 350g Aborio Rice
  • 800g water
  • salt & peper, to taste
  • 1-2 tablespoons vegetable stock concentrate
  • 250g zucchini cubed, I used green &yellow zucchinis
  • 100g spinach leaves, fresh
  • 6

Recipe's preparation

    Lemon, Leek & Zucchini Risotto
  1. Grate parmesan cheese 5 secs speed 10. Set aside.

    Place lemon zest, garlic, thyme & parsley into TM bowl & chop 10 secs speed 10. Add leek & chop for 3 secs speed 5 you may need to stir with a spatula.

    Scrape down the sides of the bowl with spatula.

    Add butter & oil & cook for 3 mins, VaromaCounter-clockwise operation speed 1.

    Add rice & wine & cook for 2 mins,Counter-clockwise operation 100 degrees speed 1.5, with out the MC.

    Add the zuchinni, stock paste & water, cook for 13 mins, 100 degrees Counter-clockwise operation speed 1.5 with the MC on.

    The risotto will still be quite liquidy, pour it into a thermoserver that has the spinach in it, add the lemon juice to taste & stir through some of the cheese & cracked pepper. Allow to sit in the Thermoserver for at least 5- 10 mins. It will continue cooking while it sits, so if you prefer more of a bite to your risotto get it out sooner than later. Serve with a bit more cheese.

Tip

Frozen peas are great to add in palce of some of the zuchinni add in the last 5 mins of cooking time.

A great dish to serve with grilled lamb.

    If I could give it 6 stars I would. I just happened to have bought all of these ingredients at the supermarket so it seem to be destiny that I cook it. I loved the lemony, garlicky flavours. It was super easy to make with it's simple ingredients, but the flavours worked a miracle together. And, best of all, everyone in the family loved it. I had them all coming out asking what was for dinner when the smells were wafting through the house. Winner!! Definitely going into the family favs. Thank you so much.

    I cooked this last week and enjoyed it hot, also cold for lunch. Love the lemony flavour and the lightness of the leek in it! I didn't have any spinach, but I stirred in some fresh asparagus pieces when I put the risotto in the thermoserver. They turned out beautifully - slightly crunchy but cooked enough by the heat of the risotto.

    We just loved it and it's such a quick and easy recipe too.
    Instead of butter, I substituted the same quantity of Nuttelex "Buttery" for dairy allergic hubby, and it turned out great!
    I took your advice and served with grilled lamb (YUM!) and I'm looking forward to experimenting with different versions. This'll definitely be a regular from now on - thanks!

    This is my go to risotto recipe. Tastes beautiful, and is more than enough for my hungry family of five. I've made this recipe a few times with and without leek (with onion) in its place. I've also added peas and mushrooms in the past. All variations were delish!

    Just made this - tastes awesome. Made it to go with some pan-fried pink snapper. Didn't realised till last minute that I'd ran out of veggie stock so chucked in an Oxo chicken stock cube and some sea salt and still turned out tasty. My four year old and toddler are gobbling it down now. My four year old who can be quite fussy declared, "I love risotto."

    Hi, great recipe! perfect consistancy

    i wanted to feed hubby and wife + a toddler so i halved the recipe ... no leftovers so in that respect perfect, i good sized plate each and a little for bubs.

    i didnt realse the way i cut up the zucchini would be the end result i thought it would chop it all - still turned out fine a bit big for bubs (have to hide vegies!) i used 200gm aborio rice and 400ml of chicken stock (were meateaters so the chicken stock 'meatied' it up for us) delicious, if you are a meateater and like the idea of no having meat in a dish (we try to 1-2 times a week) i recommend adding chick stock in place of water for more flavour

    i usd onion, not leek, used 2 garlic cloves (although recipe was halved) and cheese - i put aside the recommended amount but only used 2 tablespoons

    Another last thing - i halved so thi might be why but got no soupy, needing to rest bit at the end .. it was ready to go as soon as it stopped, perfect consistency ..!!!

    Just made this for dinner, used half the lemon rind and 1/2 juice of the lemon. I didn't have any thyme and added peas. Will be adding more juice when served. Delicious risotto, very pleasantly surprised!

    Really tasty and perfect consistency! Five stars! A definite make-again! I used the rind and juice of half a lemon and sprinkled the parmesan cheese over the top when serving rather than adding it to the risotto mix in the Thermoserver. Thanks for sharing!

    Have made this twice now and it has been beautiful each time!

    First time I made it exactly as the recipe states and it was yummy, but hubby wanted a little less lemon and some meat.  So next time I put half the lemon rind and lemon juice in, and added a chicken breast (diced) at the same time as the stock, and it was even better.

    Thank you for a yummy recipe, this one is saved to my favourites!

    I am getting my thermomix tomorrow and very excited to try this recipe. I have a couple of rather dim questions that I need answered... 1. when you add the oil and butter, it says Varoma and then an arrow in a circle. Does that mean that the oil and butter go into the varoma? That doesn't make sense to me. 2. When it says with and without the MC, why does it matter? 3. I may not have the thermoserver. How can I finish this off without it?

    Suprisingly we all really liked this added 2 leeks and squeezed even more lemon on once plated. The kids even ate some of it. Did not use the spinach as did not have any in the fridge. Will definately cook again.
