Moroccan Chickpea Stew

Ingredients

  • 50 g olive oil
  • 2 large onions, peeled and halved
  • 1 red capsicum, sliced and diced
  • 2 sticks celery diced
  • 1/2 tspeach of ground: ginger, cinnamon, cumin, turmeric
  • 1 tsp ground coriander
  • 1 tsp sea salt
  • 1 cup chopped parsley
  • 800 g cooked chick peas ( 2 x 400 g tinned, drained)
  • 400 gtin of diced tomatoes
  • 250 g chicken, /veg liquid stock
  • (or 250 g water with 1 tsp, TM veg stock paste)

Recipe's preparation

  1. Place onions into TM bowl 3 seconds on speed 5.

    Add oil, celery, capsicum and spices and saute for 5 mins at varoma temp on Counter-clockwise operationspeed 1.

    Add remaining ingredients and cook for 15 minutes/100°C on Counter-clockwise operationspeed soft.

    Transfer to Thermoserver and allow to sit for approx 10-15mins. 

    Serve with rice or couscous and dollop greek yogurt.

    Lovely, easy, tasty recipe thank you.  I cooked dried chickpeas first rather than use canned chickpeas.  My husband cooked a chicken breast on the BBQ to eat with his Moroccan Chickpea Stew and he said it went really well together.

    Great quick and easy recipe.  With most of the ingredients being cupboard stores I found this a great last minute what to cook for dinner option.  I add carrot in step 1 and serve with rice. Also if I have on hand I serve with avacado, sour cream, coriander and a few corn chips, yum.

    I was going to make this for my vego friend. I started it and went to the pantry for chickpeas. NO CHICKPEAS! So I made it with a tin of red kidney beans and a tin of four bean mix. It was lovely and even better the next day for lunch. Great flavours.

    800g of cooked chickpeas isn't the same as 2x400g tins as there is only about 260-300g of chickpeas in a tin - will get a different outcome depending on which one you use.
