Moroccan style couscous salad

Ingredients

  • 1 cup couscous
  • 1 cup Boiling water
  • 20 g Butter, cubed
  • 80 g toasted almonds
  • 10 g cumin seeds
  • 4 shallots, medium
  • 30 g honey
  • 2 tsp Ras el Hanout
  • 1 tsp salt
  • 1 tsp black pepper
  • 30 g olive oil
  • 60 g sultanas
  • 250 g cherry tomatoes, or more
  • 1 clove garlic
  • 1 lemon, juiced
  • 8 stalks flat leaf parsley
  • 4 stalks mint, leaves only
  • 4 stalks coriander

Recipe's preparation

    Step 1
  1. Place dry couscous into large serving bowl.


    Cover with boiling water, stir with fork, and cover for 2 minutes.


    Fluff with fork.


    Stir in cubed butter, and cover for 2 minutes.


    Fluff with fork.


     


     

  2. Step 2
  3. Add cumin seeds to bowl.


    Roast for 2 minutes/varoma/speed 1.


    Grind 5 seconds/speed 10.


    Add cumin and toasted almonds to couscous, , and stir through.

  4. Step 3
  5. Place shallots in bowl and chop for 5 seconds/speed 7.


    Add honey, Ras el Hanout, salt and pepper, and olive oil, and saute 2 minutes/varoma/speed 2.


    Add sultanas and stir though 10 seconds/counter-clockwise operation/speed 1.


    Add mixture to couscous and stir through.


     

  6. Step 4
  7. Place garlic in bowl and chop 3 seconds/speed 7.


    Add lemon juice, parsley, mint and coriander, and chop 3 seconds/speed 7.


    Add mixture to couscous and stir through.

  8. Step 5
  9. Place cherry tomatoes and a little olive oil in a frying pan, and saute for 5 minutes, or until tomato skins soften and split.


    Add to top of couscous salad mixture, and serve salad!

Tip

This salad takes a bit of time to put together, but the time is definitely worth the flavour!

    I LOVE LOVE LOVE this recipe! The couscous is divine and defintiely worth the effort. I made my own Ras el Hanout, which is easy peasy in the Thermomix (and you can then store for future moroccan dishes such as burgers, koftas etc), so DO GIVE THIS A TRY!

    Here's my mix for Ras El Hanout - all ingredients in TM bowl and mill (sp9, 10-20 seconds) until just right: 

    • 1 tablespoon ground  cumin
    • 1 tablespoon ground  coriander
    • 1 tablespoon turmeric
    • 1 tablespoon paprika
    • 1 1/2 teaspoons freshly grated nutmeg
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground  cardamom
    • 1 teaspoon ground allspice
    • 1 teaspoon  cayenne pepper
    • 1/2 teaspoon ground cloves
