Nacho sauce

Ingredients

4 portion(s)

  • 180 g Cheddar or combination (with Parmesan is lovely), Cubed

  • 1 Brown onion, small (or 1/2 large- around 80g)
  • 1 Large clove garlic (or 2 small)
  • 30 g Butter (or oil of choice)
  • 1 teaspoon Chilli flakes (or 1/2 cayenne)
  • 1 teaspoon coriander, ground
  • 2 teaspoons paprika
  • 400 g Tinned tomatoes, or diced fresh tomatoes

Recipe's preparation

  1. * before you start, consider whether you would like to melt the cheese on your nachos in the oven, under grill or microwave. If oven, ensure you preheat to  180C.  Prepare a lasagne dish with the corn chips.

  2. Place cheese/s into TM bowl and grate 4-5 sec, sp 6-7. Set aside

  3. Add onion and garlic into TM bowl and chop 5 sec, sp 7.

  4. Add butter/oil and sauté for 3 min, 100c, sp 1.

  5. Add remaining ingredients (except corn chips!), and cook for 3 min, 100c, sp 3.

  6. Pour sauce over corn chips, and then cover with the grated cheese and melt in oven (or grill/microwave) until cheese has melted. Top with guacamole/chives/sour cream and serve immediately! Enjoy!

Tip

A small can of kidney beans tastes lovely in this sauce - add after final cooking step above and continue cooking for an additional minute.

  • Sooo good and super quick and

    Sooo good and super quick and easy after a long day at work.  I added the kidney beans and topped as suggested with melted cheese, homemade guacamole and added natural greek yoghurt instead of sour cream.  Even my 14 yr old loved it and hates beans and avocado!!!

    This was really yummy and easy! I drained the tomatoes as suggested by JodiR. I doubled the batch but shouldnt have doubled the chilli, lol. thanks for sharing!

    Use this recipe all the time without the spices but with the kidney beans.

     And ALWAYS drain the tinned tomatoes, otherwise too sloppy.
