Pumpkin and Quinoa Salad

Ingredients

8 portion(s)

Salad

  • 250g pumpkin - diced
  • 200g quinoa, (soaked overnight, washed and drained)
  • 1/2 onion sliced
  • 80g dried apricots
  • 80g Cashews
  • 20g chia seeds
  • hand of mint leves

Salad Dressing

  • 80g TM Yogurt
  • 20g tahini
  • juice 1 lemon
  • salt and pepper to season

Recipe's preparation

    Salad
  1. Put the washed quinoa and onion into the varoma and steam on varoma temp for 10 mins on speed 3.

    Add the diced pumpkin and cook again for 15 mins at varoma temp on speed 2.

  2. Once pumpkin and quinoa are cooked.  Leave to cool.

    Empty out water from TM bowl and add apricots, cashews, mint and chia.

    Pulse once on turbo.

    Add fruit and nut mixture to the pumpkin and quinoa.

  3. Now add the yogurt, tahini, lemon juice and seasoning to the TM bowl and mix for 8 secs on speed 4.

    Pour dressing over the salad and toss to mix together.

    Enjoy !!

  • If you add damp baking paper

    If you add damp baking paper in bottom of varoma make sure you poke holes in the paper to let steam in or else it won't cook. I found the quinoa went mushy and fairly flavourless. It wasn't a favourite in our house. Sorry.

    This is soooooo yummy, many family and friends have asked for the receipe but i tell them its a secret!!! I didnt have any mint and i used store brought yoghurt and it was delicious!!

    now i made this recipe the second time, delicious like the first time, but it was now very dry and clumpy, is it possible that the quinoa absorbed the fluid of the dressing because i made it in the morning and we had the salad in the evening.

    tmrc_emoticons.) This is our all-time favourite. The flavours are exquisite together. If we have people coming over for a BBQ, this will always be on the table. It's inexpensive to make when you have those ingredients in the pantry, and comes together very quickly.

    @Vandenm :I place a layer of dampened baking paper underneath the quinoa. Also it swells after soaking and rinsing,  if you ever want to cook it in the basket.

    Fantastic, on saturday i was on a brunch where they cooked all with quinoa because quinoa is not so popular in germany and so i had all the ingredients for this recipe at home. Delicious.
