Pumpkin & Chickpea Curry

  • Fresh Corriander, handful or to taste
  • 1 brown onion, peeled & halved
  • 2 cloves garlic
  • 20ml coconut oil
  • 2.5 teaspoons ground cumin
  • 1.5 teaspoons garam masala (EDC)
  • 1.5 tablespoons vegetable stock concentrate
  • 400g can tomato pieces
  • 550g butternut pumpkin, peeled & cut into 3cm cubes
  • 400g can Chickpeas, drained
  • 6

Recipe's preparation

  1. Place corriander into TM bowl and chop 2secs/speed 7. Set aside.

     

    Place onion & garlic into TM bowl and chop 2secs/speed 5.

     

    Add oil, cumin & garam masala & saute for 3 mins/varoma/speed 1.

     

    Add vegetable stock, tomatoes & pumpkin & cook 15 mins/varoma/reverse/soft speed with MC removed.

     

    Add chickpeas & cook further 5 mins/100 deg/reverse/soft speed.

     

    Place into Thermoserver, stir through chopped corriander.

Tip

Cooled curry can be frozen in an airtight container for up to 1 month

Use as a side dish with meat or fish.

Serve with steamed rice or quinoa & a dollop of plain yoghurt

    I just made this for the first time and it was super yummy, as well as easy to make. My husband (who doesn't usually like pumpkin) went back for seconds. As per others' suggestions, I added a red chilli with the pumpkin and garlic, and a bit of extra spices.

    Loved the subtle flavor but will increase the spices next time and maybe add some chilli for a kick. This would be a great recipe for the family as it's packed with flavor and the spices are subtle enough for any tastebuds.

    I did half/half pumpkin and sweet potato and added baby spinach at the end.

    Placed the basket on top, to stop the splashes. I also placed baby spinach leaves in the Thermoserver, pour the curry in, add the coriander, then stir through. I also made the rice afterwards, without washing the bowl (as suggested on here).

    Delicious. Was a bit skeptical considering how few ingredients there are, but this will be a new favourite. Emptied the curry into thermosever and steamed rice without cleaning the jug! Do it, the rice takes on a great light flavour..

    This is superb! I didn't have any veggie stock, but it was still delicious. I squeezed some lime on top before serving, added some fresh coriander and a drizzle of yoghurt with fresh mint chopped through. Big generous serves. Thank you.

    Cheap, easy and yum!  I used a whole bunch of coriander and popped it in with the chickpeas.  The pumpkin made the sauce nice and thick.  This will be a regular for us.

    Super easy and very tasty. Mine turned out really sweet, which I think is thanks to my homegrown kent pumpkin. Was lovely with natural yoghurt, and would do well with boiled rice but I just had it on its' own.

    Absolutely the best curry I have ever made! The pumpkin falls apart to create the creamy tomato texture ( it's not a runny curry ). Thoroughly enjoyed topped with some slivered almonds and coriander.

    This is so simple and so delicious. I recently had a lazy week and had it for dinner four nights in a row - and not once was I feeling it was too much. I had it on its own, with rice, with toasted 5 seed bread, with and without a yoghurt dollop.... every time it was just YUM!!

    Quick, easy, delicious, cheap and satisfying!
