  • 2 cm ginger knob
  • 1 teaspoon curry powder
  • 2 Kaffir lime leaf
  • 250 grams vegetable stock
  • 400 grams Pumpkln, cut into small chunks
  • 1 handful of baby spinich
  • 150 grams coconut cream
  • 1/2 lemon juice
  • Pinch salt
  • 400 grams Chickpeas, rinsed and drained

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. chop ginger, onion and garlic 3 sec/speed 7. scape the bowl when finished

  2. add 30 grams coconut oil and saute 3 min/120ºC/Counter-clockwise operation/Gentle stir setting.

  3. add curry powder and kaffir lime leaves and cook 2 min/100ºC/Counter-clockwise operation/Gentle stir setting.

  4. add vege stock and pumkin and cook 10 min/100ºC/Counter-clockwise operation/Gentle stir setting.

  5. add chickpea and cook 2 min/100ºC/Counter-clockwise operation/Gentle stir setting.

  6. add coconut cream, lemon juice and spinich and cook 1 min/100ºC/Counter-clockwise operation/Gentle stir setting.

Tip

1. BBQ chicken can be added if desired.

 

2. Use with coliflower rice: Half coliflower added to mixing bowel. Pulse on sped 5 Counter-clockwise operation until desired consistance acheived.  Add 1L water in bottom of bowl and steam 12mins, speed 2, varoma

    Tasty, but needs less liquid. I used about 200ml of vegetarian "chicken" stock and it was just too soupy.

    Yummy, I replaced the coconut milk with cream.  Half the liquid for the stock. I used two teaspoons of stock and 125ml water Instead.
