Quick Healthy Lentil and Vegetable Stew

Ingredients

6 portion(s)

LENTIL DISH

  • 200 g brown lentils, (not tinned)
  • 3 cloves garlic
  • 2 large carrot, diced
  • 3 Small Potatoes, diced
  • 2 tablespoons Vege Stock Concentrate or one beef stock cube
  • 650 g water
  • sea salt & pepper to taste
  • 40 g olive oil, extra virgin

Recipe's preparation

    LENTIL STEW
  1. Soak lentils overnight then rinse. Chop garlic on speed 7 for 5 seconds.

    Add oil and saute for 2 minutes/100 degrees/speed 1.

    Add lentils to TM bowl.

    Saute at 100 degrees on speed Gentle stir setting for 1 minute on Counter-clockwise operation.

    Add stock, salt and water and cook for 20 minutes on Counter-clockwise operation and on Gentle stir setting with MC removed and TM basket on mixing bowl lid to allow evaporation.

    After 20 minutes add potatoes and carrots and cook for a further 20 minutes.

    Once cooked check if the lentils are cooked to your liking. If you want to cook longer add a little extra water and cook for a further 5 minutes.

    Once cooked put in a cassorole dish or ThermoServer and leave the lid off and let sit for a few minutes. The lentils will further absorb the liquid. Serve with some rice. Very tasty, cheap and healthy meal.

Tip

Add Zuccini or other veges that you like. 

You can steam an omlette in the varoma or some fish to go with the Lentil dish.  If you do this add about an extra 150g of water and cook the dish at varoma temp.

    I add pearl barley to my recipe and double up on everything. I know the recipe says this is for 6 people but as its usually our main meal it's enough for two people with two helpings as it's so tasty

    Really enjoyed this meal, came out a bit bland in colour but tasted very nice. Did add some zucchini and mushrooms half way through the cooking time and didn't add the extra salt as I find the stock is enough. Good meal to save and freeze up for night shift.

    very versatile recipe!

    I used split red lentils and whole green lentils because that is what I had on hand. I cooked for an extra 5 mins and the green lentils were fine - no sign of the red lentils. Next time I would use 1 tablespoon of stock as two was a bit to intense for my taste. I also added spinach in the last 5 minutes as I had that too. I also changed oil to 10g less coconut oil. Used whatever veggies I had on hand. Versatile, quick, easy and yum! Thanks for sharing.

    This is a great last minute, "what to cook?" dinner option.  I added a few extra veggies and it was super tasty. Even my omnivore, "I hate lentils and wont eat them" husband enjoyed it.

    Thanks for such a simple and super yummy recipe. i added a tsp of cumin, turmeric and coriander powder with the hard veg and added mushroom, kale, red cabbage, brocolli and cauli half way through the cooking time. Served with brown and rice and homemade mango chutney, it made a cracking veg packed lunch for a group of friends.... and sooooooo simple!

  • I couldn't find brown lentils

    I couldn't find brown lentils so used green lentils and this turned out wonderful.  I didn't add any extra salt, only what was in the stock concentrate and it turned out a little too salty for me so I would probably add less stock next time.  Still delicious though! I will definately make again.

  • The basket is not supposed to

    The basket is not supposed to go inside the thermomix it is supposed to go on top of the lid where the MC usually sits to stop splatters whilst also allowing evaporation.  

     

    I made this today with the following changes. 1/2 lentils and 1/2 soup mix. 1/2 potato and 1/2 sweet potato. Added zucchini, mushroom, 3 spinach leaves and peas. It's YUM! My 1yo gobbled some up as soon as it was ready. Serving the rest for dinner tonight with some cauliflower rice!

    Made this tonight and it was delicious! I used soup mix as I had run out of lentils. I also substituted potato for half a small sweet potato and added a stalk of celery and two silverbeet leaves. Seasoned with coriander. Will definitely make it again! Yum!!

    OK, about to give it a go. Taste testing on some friends, one of whom has some dietary issues and this looks safe for her as well as tasty.

    Well, consensus was that it was tasty, and definitely didn't need any more salt. (They use very little so might take down the concentrate a tad next time). I did use red lentils though since that's what I had on hand. Seemed to work, though possibly a bit less chunky.

    I just tried the basic version, and it was delicious, but only after I had cooked it for longer in a saucepan without a basket separating the water and the other ingredients, and let all the water soak into the veggies and lentils. If made as directed in the TM I found it undercooked. Also, (and maybe this reflects my beginner cooking status,) I wasn't sure whether to put the stock in the water or the basket with lentils and veggies. Clarification would be great!
