Quinoa, Lentil, Red and Wild Rice Salad

  • 50 grams white quinoa, red quinoa, red rice, wild rice and French lentils
  • 1 tablespoon TM vegetable concentrated stock
  • 200 grams grape tomatoes
  • 1 Lebanese cucumber
  • 2 spring onions
  • 1 bunch coriander
  • 12 mint leaves
  • 1,200 grams water

Orange Dressing

  • 1 Orange peeled
  • 1/2 orange zest
  • 1 tablespoon wholegrain mustard
  • 1 pinch fennel seeds and cumin seeds
  • 1 spring onion
  • 30 grams olive oil
  • 30 grams white wine vinegar
  • 1 tablespoon brown sugar
  • salt and pepper to taste

Recipe's preparation

    Quinoa, Lentil, Red and Wild Rice Salad
  1. Place water in TM bowl, insert basket and place rice, lentils and stock into basket and cook for 15 minutes at Varoma Temperature on speed 4. Add quinoa to basket and cook for a further 15 minutes at VaromaTemperature on speed 4. Set aside

    Chop cucumber and spring onions in 1/2 inch squares, halve tomatoes and roughly chop mint and coriander.

    Toss with rice, lentils and quinoa

  2. Orange Dressing
  3. Place all ingredients in TM bowl and process for 2 minutes on speed 10

    Add to salad

  • We really enjoyed the salad,

    We really enjoyed the salad, but something went wrong with my dressing, so we used a balsamic/soy dressing instead which was good. My dressing congealed totally! Later on it started separating - watery at the bottom and lumpy at the top. If anyone can throw any light as to why this happened I might try it again as others are raving about it!

    I don't know if this made it happen: I used the bowl soon after the quinoa,rice,lentil mixture finished cooking so the bowl was still warm. I didn't see any reason to rinse or wash it but it was quite dry when I started the dressing. Thanks.

    Absolutely divine, I served it with BBQ haloumi.    The dressing is delicious.   I too used brown rice instead of red And it tasted great.

    tmrc_emoticons.)  Just made dressing ready for salad tonight.  Best dressing ever, thank you.....I can imagine this going with a lot of things.

    As for amounts of grains, I would say 50g of each as I have just weighed them out for cooking and looks appropriate.
