Pumpkin curry

  • 500 g Kent/Jap pumpkin, Cut into approximately 2cm pieces including the skin
  • 20 g Coconut, Shreded
  • 50 g coconut cream
  • 1/2 teaspoon Black mustard, Seeds
  • 1/2 teaspoon black peppercorns
  • 1/2 --- onion, quartered
  • 2 cloves garlic
  • 1/2 teaspoon tumeric, powder
  • 1 teaspoon sea salt
  • 8-10 leaves Curry Leaves
  • 1 green chili, Sliced
  • 200 g water
  • 1/2 teaspoon Roasted curry powder

Recipe's preparation

  1. 1.       If the shredded coconut is not fresh, soak the dried coconut in some hot water until soft. If time poor, place the coconut and hot water in the microwave and heat for approximately 1 minute until soft.

    2.       Place the mustard seeds and the peppercorns in the TM bowl and grind for 1min/speed 9.

    3.       Add the shredded coconut, coconut cream, curry powder and one garlic clove and mix for 30s/speed7. Set aside.

    4.        Place the onion and the remaining clove of garlic and chop for 5s/speed 5.

    5.       Add the cut pumpkin, turmeric, salt, green chilli, curry leaves and the water and cook for 10mins/speed soft on reverse.

    6.       Add the shredded coconut mixture into the pumpkin and cook for further 5mins/speed soft on reverse with MC off.

    7.       Check for seasoning.

    8.       Pour it into the thermoserver and leave for approximately 10 minutes before serving.

    9.       Enjoy with steamed rice.

Tip

Sweeter varieties of pumpkin such as Kent/Jap pumpkin will give you tastier results.

Most coconut creams contain preservatives, check the label. Ayam or organic varieties would be better for you.

    Temperatures would have been useful as we are TOTAL bwginners and had to guess! 

    Was very tasty though, even if we cooked it wrong!
