Sweet Potato Mac ‘N’ Cheese

Ingredients

4 portion(s)

Mac & Sauce

  • 500 grams Macaroni Pasta, cooked
  • 3 sprigs rosemary, leaves only
  • 400 grams sweet potato, Peel the sweet potato and chop roughly
  • 45 grams plain flour
  • 1 clove garlic, peeled
  • 1 teaspoons Dijon mustard
  • 1 teaspoon lime juice
  • 45 grams olive oil
  • 2 teaspoons salt
  • 470 grams Soy or Almond Milk
  • 1 teaspoon soy sauce

Recipe's preparation

    Pasta
  1.  Cook pasta as per normal.

     

  2. Sweet Potato
  3. Chop rosemary and set aside.

     

     

     

  4. Peel the sweet potato and chop roughly and add to bowl along with garlic. Cook for 15 mins on 100 degrees speed 2.

  5. Mash for 30 secs speed 4 (butterfly is not needed). Set aside.

  6. Sauce
  7. Make a roux by adding oil and flour and heating for 2 min 90 degrees speed 3.

     

  8. Then add mashed sweet potato, almond milk, salt, garlic, mustard, soy sauce, and lime juice to the bowl and stir for 3 or so minutes on 80 degrees speed until the sauce thickens.

  9. Add the sauce and rosemary to pasta and toss to coat.

    I am really disappointed!

    I made this for my kids today and it tastes terrible! The sauce turned out lumpy and would not thicken even with extra time given. 

    I followed the instructions (as best I could as some are not very clear). Maybe I have done something wrong? If anyone else tries this recipe please post your tips. TIA

    The name is a bit misleading but there is no cheese in this recipe, however it really does taste like there is.

    Is there a missing ingredient !  I would like to try this recipe as my family and myself just love macaroni cheese. I know this is made with different ingredients which sound amazing but the name says Sweet Potato Mac 'N' Cheese, and there's no cheese in recipe. Oh and doesn't have quantity of how much soy sauce to add.
