Vegan Peanut Lime Curry with Tofu

Ingredients

4 portion(s)

  • 200g rice
  • bok choy, Chopped
  • 2 carrots, Cut into matchsticks
  • 100g broccoli, Cut into bite sized florets
  • 2 tbs palm sugar
  • 4 Kaffir lime leaves
  • 1 red chilli, Chopped into chunks
  • 1 onion, Quartered
  • 60g vegetable oil
  • 2 tbs red curry paste, Five Tastes brand is vegan
  • 100g water
  • 2 tbs soy sauce
  • 400g coconut milk
  • 100g Peanut Butter
  • 500g firm tofu, cut into bite sized pieces
  • 1 cup firmly packed Thai basil leaves

Recipe's preparation

  1. Method:

    1. Place 900g of water in tm bowl, 200g of rice in basket. Lock lid. 
    2. Chop carrots, broccoli and bok choy, place in varoma.
    3. Cook rice and steam veggies at the same time 16 minutes/varoma/speed 2.
    4. Place veggies in large bowl. Put rice in thermoserver. Empty water from tm bowl. 
    5. Place palm sugar in tm bowl. Grate 5 seconds/speed 5. Set aside.
    6. Place chilli, onion and lime leaves in tm bowl. Chop 3 seconds/speed 6. Scrape down sides.
    7. Add vegetable oil and curry paste into the TM bowl and saute for 4 minutes/varoma/speed 1 MC off.
    8. Add palm sugar, soy sauce, water and coconut milk and cook for 4 minutes/varoma/speed 1 MC off.
    9. Insert Butterfly and add peanut butter, tofu and basil and cook for 2 minutes/varoma/reverse + soft speed.
    10. Add tofu mix to the steamed veggies in the bowl, gently mix to combine.
    11. Serve with rice. Enjoy!

    Yum!!! This made heaps of food and it's super tasty. I'm not vegan so I just used a red curry paste I could find at Woolies.

    Really delicious all in one meal. Made recipe exactly as suggested. Hubby was a big fan and said he'd be vegetarian if all the meals were this good. Amazing recipe, will be a regular!

    Delicious. I didn't include the water as I was worried the sauce would be too thin. The consistency was good...if anything I could have held back some coconut milk.

    When shredding the Palm sugar, make sure the bowl has cooled down before adding. My bowl was still hot and the sugar just stuck to it and was hard to get out!

    We loved this!. I couldn't find a vegan thai curry paste so made the cookidoo version. Next time I'll leave out the water and 1/4 of the coconut milk

    Delicious curry
    Used red capsicum instead of bok choy, brown sugar (half amount) instead of palm sugar, and normal basil instead of Thai as that is what I had. Had a 300g pack of tofu but that was the perfect amount I thought. Will definitely make again.

    This is nice and full of flavour! The tofu is just a bit bland itself - could always try with a marinated tofu! And there's both a lot of tofu, and it makes sooo much food! tmrc_emoticons.)

    Absolutely loved this dish. Easy peasy and the First time I've had true success with rice and steamed veg in the the thermo too! I even had to substitute the Thai basil for a Thai paste and the fresh kafir lime leaved with shredded leaves in the jar and it was still delicious.
