Vegan Peanut Lime Curry with Chickpeas

  • 200g rice
  • bok choy, Chopped
  • 2 carrots, Cut into julienne
  • 100g broccoli, Cut into bite sized florets
  • 2 tbs Coconut sugar
  • 1 lime, Juiced
  • 1 onion, Quartered
  • 60g vegetable oil, (Omit if Oil free and replace with water)
  • 2 tbs red curry paste, (Five Tastes brand is vegan)
  • 100g water
  • 2 tbs soy sauce
  • 400g coconut milk
  • 100g Peanut Butter
  • 1 Chickpeas (400g)
  • 1 Cup firmly packed Basil leaves

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Method:

    1. Place 900g of water in tm bowl, 200g of rice in basket. Place id on top.
    2. Chop carrots, broccoli and bok choy, place in the Varoma Tray.
    3. Cook rice and steam veggies at the same time 16 minutes/Varoma/speed 2.
    4. Place veggies and rice in Thermoserver. Empty water from tm bowl. 
    5. Place onion  in tm bowl. Chop 3 seconds/speed 6. Scrape down sides.
    6. Add vegetable oil and curry paste into the TM bowl and saute for 4 minutes/varoma/speed 1 MC off.
    7. Add coconut sugar, lime juice, soy sauce, water and coconut milk and cook for 4 minutes/varoma/speed 1 MC off.
    8. Insert Butterfly and add peanut butter, chickpeas and basil and cook for 2 minutes/Varoma/reverse + soft speed.
    9. Add chickpea mix to the steamed veggies and rice in the bowl, gently mix to combine.
    10. Enjoy!

    Just made this tonight, it was really nice! We made a few changes though:

    - used red onion

    - added a piece of coriander - roots and all - with the onion

    - added some baby spinach in the thermoserver with the steamed veg and rice

    - green curry paste instead of red

    - palm sugar instead of coconut sugar


    When it was done, I found it was a tiny bit bland. I added about 1tsp more salt and about 1/4 tsp MSG powder and that brought the flavours out nicely! Great flexible base recipe. I think next time I'll cook the rice in the rice cooker and steam the veg in the varoma while doing steps 7 & 8 (increasing the time in step 8 to make the veg steamed for about 20 mins).

    Hi JeffnJullie, I'm sorry to hear you were disappointed. I'm not too sure what has happened as i cook this on  a regular basis and it does not turn out the way you have described.     We think that we followed the recipe and it ended up being a bit fiddly to make, quite bland without any depth of flavour, very watery and took longer than the 27 minutes total preparation/cooking time we had expected. Not sure where we went wrong.  Having leftovers for dinner tonight so perhaps the flavours will have intensified overnight.  Thank you for the recipe
