Vegetable Rosti stack with sour cream, smoked salmon and basil pesto

  • 500 grams potatoes, Peeled and roughly chopped
  • 200 grams carrots, As above
  • 3 spring onions, Finely sliced
  • 2 tablespoons Chopped fresh parsley
  • 2 eggs
  • 40 grams plain flour
  • salt and pepper to taste
  • Smoked Salmon, To serve
  • sour cream, To serve
  • Basil Pesto, To serve
  • Extra parsley, To serve
  • Lemon wedges, To serve

Recipe's preparation

    Method
  1. 1. Wash peel and roughly chop potatoes and carrots.
    2. Blitz on Turbo twice. MC in place.
    3. Add remaining ingredients, except for those for "serving" and blend so 4/Counter-clockwise operation/ 10 seconds.
    4. Heat a little oil in a large pan and drop TBLSPN amounts into the oil, flattening slightly. No larger or they will break when you flip them.
    5. Once brown underneath, gently turn them over to brown again.
    6. Drain on absorbent paper. Continue cooking.
    7. Serve the Rosti with the suggested accompaniments above or top with a fried egg instead.
