Vegetarian Lasagne
- 1/2 brown onion
- 2 garlic cloves
- 1 --- Handful basil leaves
- 2 carrots, roughly chopped
- 1 stick celery (with leaves if you like), roughly chopped
- 100 g pumpkin, peeled and roughly chopped
- 100 g mushrooms, halved
- 1/2 red capsicum, roughly chopped
- 1/2 zucchini, roughly chopped
- 1/3 eggplant, roughtly chopped
- 3 tomatoes, halved
- 400 g Diced Tinned Tomatoes
- 300 g tomato puree
- 50 g red wine
- 20 g TM vegetable stock concentrate
- salt and pepper to season
- 1 portion Bechamel sauce
- 100 g Tasty cheese, (for topping)
- 1 package Lasagne sheets

Recipe's preparation
Grate all cheeses for Béchamel sauce and Lasagne topping in TM bowl – set aside.
2. After giving TM bowl a quick rinse, place onion, garlic cloves and basil in bowl and chop for 3 seconds, speed 6. Scrape down sides of bowl then sauté for 2 minutes, 100o, speed soft.
3. To sautéed mixture, add roughly chopped carrot, celery and pumpkin. Chop for 4 seconds, speed 5. Scrape down sides then add softer vegetables, roughly chopped capsicum, mushrooms, zucchini, eggplant and tomatoes. Chop for 6 seconds, speed 5.
4. To vegetables, add tinned tomatoes, puree, wine, pepper and vegetable stock. Cook veggie bolognaise mixture for 20 minutes, 100o, reverse speed soft. Set aside until your Béchamel sauce is cooked.
5. Give TM bowl a quick rinse and make your Béchamel sauce according to instructions in your Every Day Cookbook.
6. Layer your lasagne as your normally do in baking dish – if you don’t normally make lasagne, I tend to layer it following this pattern

7. I’m sure we would have cooked it for around an hour in the oven on 180o until well browned.

* Admittedly this ‘Veggie Lasagne’ ended up changing ever so slightly (to keep hubby happy) and I added some sliced ham in between bolognaise mixture and lasagne sheets.

Has potential but seemed a bit bland. Next time will try adding salt and mixed herbs, and maybe some bacon, into the veg mix.
Also found that as the bowl was reasonably full by the time I added the last veg for their blitz they didn't get chopped properly, so needed much longer and spatula assistance to get chopped - meanwhile the first added veg become way too fine. Will take first lots of veg out next time then re-add.
Used double quantity of bechemel which worked well.

I think it was a bit too heavy on tomato paste however, so I'd use less next time.
I also used sweet potato instead of pumpkin and I also doubled the bechamel sauce from the BCB, further to advice from other reviews below.

Lovely recipe, nice & easy. I strained a bit of liquid and added a dash of worstershire sauce. I also tried using the ham slices to stay on side with the family but my 3 year old ended up eating it all except for the ham - go figure!!

Mine was super runny i don't know what happened. Maybe i had too many veggies in bowl and chopped then too long. Ended up straining 400mls of liquid. Definitely need more white sauce

You say to grate all cheese at the beginning for the Bechamel and Lasagne topping but my EDC book doesn't need any cheese for the Bechamel sauce. Do you use the Cheese Sauce variation instead?

Made this to have with lunch
Made this to have with lunch Easter Sunday. A big hit! I didn't use carrot though I had a small Fennel bulb so used that instead. I also wanted a bit of texture so I sliced and roasted a couple of Eggplant and some pumpkin and made a layer of each between the other layers . Very nice. I made a double recipe of the EDC Bechamel Sauce and topped it all off with a mixture of grated Tasty cheese , mozzarella and Parmesan .

Dear Elise, Thank you so much for posting this recipe. It has become a family favourite. My partner - who is vegetarian - and I just love it! I made it for my family who were impressed. My partner's family loved it too. I make the bolognaise sauce the day before, put it in the fridge to use the next day if I have to make it for lunch, and am in a hurry ie. have to make it, cook in oven, then take it with us to a family gathering. The sauce also freezes well too. A fantastic recipe! Thanks again.

Yum! A fabulous recipe. A little spooky how much the vegie bolognaise looked and tasted like real bolognaise! I made 1.5 times the bechamel sauce from EDC and this proved exactly the right amount. Thanks for a great recipe.

Very tasty recipe. I used most of the veggies listed but added more of some and less of others and my vegetarian hubby was extremely impressed with the final result. Now the real test is tomorrow - will the toddlers eat it????
I recommend making 1.5 - 2 quanities of Bechamel Sauce. One didn't seem to be enough. I think I also baked in too small a dish (35cmx23cmx5cm). This size is ok for a pasta bake but not for this lasagne. I only managed 2 layers and felt like I needed more pasta in my serving to really quench the appetite.... So I went in for a second helping.
Will definitely be cooking this one again.

We really enjoyed this lasagne. The texture was great and I just used the veggies we had in the fridge. Added in a tin of cannellini beans and few hundred grams of baby spinach once all the other veggies were cooked and then blended before adding to the lasagne. Yum! Thanks for sharing, I'll be making this one again!
