- 500 g broccoli florets
- 400 g sweet potato, sliced
- 200 g peas
- 3 cloves garlic
- 2 onions (medium), quartered
- 400 g coconut milk
- 500 g water
- 3 cm ginger fresh
- 1 tablespoon TM stock concentrate
- 30 g coconut oil or butter, cut into chunks
- 1 lemon, for Peel and Juice
- 10 g curry powder
- to taste Salt and pepper

Recipe's preparation
Place onion, ginger and garlic into TM bowl. Chop 5 secs, spd 5
Add oil or butter and curry powder and saute 3 mins 100 degrees spd 1.
Tip - loosen paste from base of bowl with spatula to ensure paste mixes and doesnt burn.
Add coconut milk, TM stock and water and season with 3 strips lemon rind. Put lid in place and close.
Place broccoli, sweet potato and peas in Varoma dish. Put Varoma in place on top of bowl.
Cook for 15minutes, Varoma temp spd 1-2.
Season with salt pepper and lemon juice and serve as a main meal or side dish.

Unfortunately I didn't adjust the water and too thin for our liking. Ended up throwing rice in with the sauce and making it like a risotto!

Such a bad recipe - I regret not reading the comments. Sweet potato was practically raw and the sauce was way too watery.
Also, why are people giving it 5 stars when they admit the recipe wasn't very good and/or had to make alterations?

This recipe has a good heart but the instructions make it almost unusable. I even read through the comments and added rice. I had to add time because the Rice and vege were not done then they were over done and there was little sauce for the curry. I don't understand how it's got such a high rating.

Very easy and tasty. Glad I read comments first about it being watery. Only used about 250 of water and put rice in steaming basket. Used pumpkin instead of sweet potato and red capsicum. Also steamed some tofu with the veg and it's yummy 😋

Very nice thanks. I used 150ml water as per other comments stating that it was too runny with 500ml water and added diced carrots into the varoma dish with other vege. I needed to cook vege for 20mins and they were diced with broc being small pieces - 15mins would have been raw!!! Tasted awesome!

This was delicious!! Luckily I read the comments below first to add rice in the basket with the sauce. I added 1.5 cups rice and topped up with a bit more water from the coconut cream can. I accidentally poured three times the required curry powder but it just gave it more of a kick which we love. Next time I won't add the lemon zest as my daughter didn't like that bit (but I did), will add lemon juice though. For the veges I just added whatever I had: pumpkin, sweet potato, broccoli stalks, peas, carrots. Very yummy and very satisfying! thanks for sharing. I would recommend editing this to add the rice! Thanks
Pretty good - steam rice too
Pretty good - steam rice too though to absorb some of the liquid. I added just over a cup which was plenty and rice was flavoured with the yummy sauce. In the varoma I put sweet potato, pumpkin, cauliflower and asparagus. I found 15 minutes wasn't long enough because the veggies in the varoma hadn't steamed at all (I had plenty of space between them so there was lots of air holes) I made the rookie mistake of then going too long so my veggies were too soft :/ I threw them together with the sauce which made it edible.

500ml of water and 15min cooking time (for sweet potatoes to cook); are you high or am i doing something wrong? It was a disaster, the veg wasn't cooked (rock hard) and the sauce was like water. Fail

This is delish!!! I have made it twice now. I only added 175ml of water. I also added tofu to it.

Unfortunately the sauce is too thin for our taste. On reading the recipe, I thought 500ml was a lot so I only put in 300ml, but still too thin. Not sure how to rescue this. The downside is we don't eat rice. im hoping if I leave it the veg will absorb the liquid.

Fantastic recipe, it was absolutely delicious!! I also didn't read the comments about cooking the rice to soak up some of the sauce. I ended up reducing the sauce on the stove as it was too runny otherwise. Might be handy if you add that in the Tip section for those of us too impatient to just get started to read the few comments that mention that part

This dish is absolutely delicious. I add more liquid and 1.5 cups of rice to the steaming basket with it, then add extra cocnut cream to make more sauce at the end...YUM and I use 260mL coconut milk and top with water to make up 400mL. I have used cauliflower instead of broccoli and I think it was nicer LOVE this dish, it is a family favourite now. Thank you.

Flavour is delicious. I used brown rice, so had to cook for another 10mins. I left the veggies on this extra time which meant they were over cooked which was a shame, but still tasted delicious, and will be sure to make this again and put the veggies on later.

This was awesome!! Made it tonight. With the rice in, it was not watery at all. Rice absorbed most of the liquid. I needed to cook the sweet potato and rice for 25 mins though, not 15 as stated in recipe. I also substituted peas for tofu, put it in the varoma with the veggies. Perfect! Wow! Perfect flavour; I steamed veg and lamb in the Varoma and then poured the sauce over it. I halved the recipe as there is only 2 in our house and this will be in the weekly rotation.

My apologies - I do usually add rice when I steam the veggies in the Varoma.
Then the rice soaks up the extra liquid and makes a rather delicious total dish.........

Michelle, yep, you got it, it's as simple as that. Measuring cup off and Varoma dish (+tray, if steaming different foods) on top. Be careful when you remove the lid when steaming as you can give yourself a burn!
