- 1000 g water
- 200 g sweet potato (diced)
- 200 g butternut pumpkin (diced)
- 1 red capsicum (chopped)
- 1 beetroot (diced)
- 1/2 --- punnet cherry tomatoes
- 1 small red onion (diced)
- balsamic vinegar
- olive oil

Recipe's preparation
Add water to bowl, put rinsed rice in basket and place inside thermomix bowl. Add potato, pumpkin to lower tray of varoma and beetroot and capsicum to top tray. Cook for 25 minutes at Varoma Speed 4.
Once cooked place vegetables on a lined baking tray. Add tomatoes and onions to the mix and drizzle with oil, vinegar and salt and pepper to taste. Bake at 180deg in oven for 20-30 minutes or until browned.
Place rice in Thermoserver and drizzle with oil. Once vegetables are cooked, toss through the rice along with basil and spinach/rocket. Crumble feta over the top along with some lime/lemon juice (optional)

This was delicious. We didn't have beetroot so I added squash and zuchini instead. We served with a slice of crusty homemade bread and also used vegan feta as we are dairy free. We didn't have wild rice but used basmati rice and will get wild rice for next time. Will definitely be making this one again.

Very colourful Unfortunately I didnt have wild rice but i really wanted to make this, so i just used white long grain, so the rice didnt turn out absolutely perfect but it was still a FAB dish. I will make again with wild rice for sure. The feta on top is a winner too..

Wild rice is a blend of different rices that are all really good for you. You can generally find it in your local supermarket. You could use normal rice in this dish but the wild rice gives it so much more flavour and goodness.
