Zucchini Capsicum pancakes

  • 400 g mozzarella

Dough

  • 200 g flour
  • 240 g Milk
  • 6 --- eggs
  • 1 pinch salt
  • 1 pinch white pepper

Topping

  • 90 g onion
  • 1 clove garlic
  • 1 tsp paprika, sweet
  • 2 tsp Oregano (dry), 2tbsp if using fresh
  • 1 tsp salt
  • 1 tsp white pepper
  • 1 zucchini, thin, small slices
  • 1 red capsicum, thin rings
  • 1 yellow capsicum, thin rings
  • 4 tomatoes, sliced
  • 75 g black olives, without seeds
  • fresh origano, to garnish

  • 1 yellow capsicum, thin rings

Recipe's preparation

    Preparation
  1. 1. Put the mozzarella into the TM bowl. Shred for 3 sec. on speed 5. Put in extra bowl and set aside. 


     

  2. Dough
  3. 1. put all the ingriedients into the TM bowl, mix altogether for 15sec on speed 4.


    2.transfer it in a bowl covered with a teatowel for 30 mins.


    3. preheat the oven to 200deg.


    4. put the dough on a pizza tray or on a baking paper lined normal tray or use the thermo matt.


    5. bake for 10min, then take the tray out of the oven but dont switch the oven off.

  4. Topping
  5. 1. place the onions and garlic into the TM bowl and chop for 3sec on speeed 5.


    2. then add the 250g tomatoes, papika, oregano, salt and pepper and mix together for 5sec. on speed 3.


    3. spread all this on the dough.


    4. then put the zucchini. capsicum, tomatoes and olives and the shredded mozzarella on top.


    5. put the tray back into the oven and bake for another 20 mins.


    6. garnish and serve with the fresh origano.

    I needed closers to 650g of flour to make a 'dough' that ended up making 2 'pizzas'

    given that there is no yeast in the pancake mix it won't rise, so no need to rest it

    besides the messing about with the dough/pancake/base, the flavours were nice and the kids ate it.
