Zucchini slice

  • 120 g Cheddar cheese, cubed roughly
  • 1 large onion, quartered
  • 1 large carrots, chopped roughly
  • 1 zucchini, chopped roughly
  • 220 g self-raising flour
  • 80 g olive oil
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • 1 bunch spinach, chopped, or 1 packet frozen spinach (thawed)
  • 5 eggs, lightly beaten
  • 3 tomatoes, sliced
  • 6-8 mushrooms, sliced
  • Salt & pepper to taste

Recipe's preparation

    Zucchini Slice
  1. 1. Pre-heat oven to 180 degrees.

    2. Grate cheese for 6-8 seconds, speed 8.  Remove and set aside.

    3. Chop zucchini, carrot and onion in TM bowl for 15 seconds, speed 5.

    4. Add flour, oil, 100g cheese, lightly beaten eggs, chopped spinach, worcestershire sauce, smoked paprika, salt & pepper.

    5. Mix for 20 seconds on reverse, speed 3-4.

    6. Pour into a well-greased square pan.

    7. Top with a layer of sliced mushrooms, then add a layer of sliced tomatoes.  Scatter the remaining grated cheese on top.

    8. Bake for 40 minutes, or until browned.

Tip

I tend to add whatever other veg I have in my fridge too - pumpkin, spring onions, red capsicum.  If adding more, just adjust the cooking time and check it is cooked with a skewer.

    Absolutely delicious, I added capsicum and sprinkled mozzarella to hide the tomatoes from the kids

    Thanks for this recipe! I just made it and really enjoyed it. Although i'm super tired and didn't realise i wasn't supposed to put all the cheese in. Oops. Still tasted great. Thanks!
