THERMOMIX ® RECIPE
Ingredients

Fish & Marinade
- 3 White Fish Fillets
- 40 g mirin
- 15 g chinese cooking wine
- 45 g light soy sauce
- 5 g sesame oil
- 2 cloves of garlic peeled
- 1 spring onion, chopped in half
- 400 g udon noodles
- vegetables of choice for steaming, optional
- toasted sesame seeds for garnish, optional
Sauce - mix in a small bowl and set aside
- 3 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tbsp water
- 1 tbsp castor sugar premilled

Recipe's preparation
- Add garlic & spring onion to TM bowl, chop 3 seconds speed 6, scrape down
- Add marinade ingredients, mix for 2 seconds speed 4
- Pour marinade over fish in a shallow dish and marinade 1 hr or as long as you have before cooking
- DON'T WASH TM BOWL
- Put fish on top Varoma tray, tip remaining marinade back into TM bowl (don't freak out, you are going to cook this at 114 degrees, you won't die, but it will add to the flavour)
- Fill TM bowl up to 500g mark with water
- Add veggies to basket
- Put Varoma in place and cook for 20 minutes, Varoma temp, speed 2
- With 3 minutes remaining, add the udon noodles to the bottom half of the Varoma (if you think you will forget, set the timer initially for 17 minutes, then put the noodles in and set for the last 3 minutes)
- When cooked, take lid off Varoma and slide under bottom half to catch drips, pour your little bowl of sauce over your noodles and stir through (leave a few spoonfuls to drizzle over the fish)
- Spoon a little sauce over the top of the fish, sprinkle with sesame seeds and serve with noodles & veggies (you can serve the fish whole, or break it into bite sized pieces)

Tip
If you wanted to increase the quanity of this recipe you could use the bottom half of the varoma for fish also, and cook your noodles in your Thermoserver instead - just pour boiling water over them and sit for 2-3 minutes
If adding vegetables to the dish, use the guide in the front of the EDC and add them in according to cooking time

This was just what I was
This was just what I was looking for. The only criticism would be that the vegetables we're really overcooked - next time I'd add the veggies when I added the noodles. I did add a tbsp of chicken stock to the water which made a lovely asian hot pot size and thickness of the fish really needs to taken into account here. Thank you - this will be added to quick tasty weeknight meals list.

I got mixed up thinking the marinade was the sauce realised after putting in the oyster sauce, but it still tasted nice. I used wine instead of mirin.I put in the vegetables in after 10mins of fish steaming. Thank you for posting
The flavours were delicious.
The flavours were delicious. I used salmon and knew it would cook in 17 minutes. The udon noodles I used did not cook. The packet says boil for 10 minutes so steaming for 3 minutes did not work. I had to take them out and boil separately. By this time the water had evaporated from the bowl anyway. I took DdE 's good suggestion of adding pickled ginger. I cut it up and added to the oyster sauce mixture and this added a lot of flavour to the noodles. I will make this dish again with these minor adjustments as it is very like a salmon stir fry I used to do but so much easier in the Thermomix.

Very yummy! I made this with salmon, and I cooked my noodles in a pot separately as they were dried. For vegies I did broccoli, snow pes, and carrot. Great flavours, very juicy tender fish

Followed the recipe to the letter and the veges were still cold and the fish was still raw, not sure what went wrong but will keep trying.

Can substitute with Marsala or dry white wine. you could give this a try
