Cream of Pumpkin Soup

  • 1 large onion,peeled and halved
  • 1 large potato,peeled and quartered
  • 500 grams pumpkin ,peeled and roughly chopped
  • 500 grams water
  • 1 tablespoon Vegetable stock paste
  • 100 grams pure cream

Recipe's preparation

    Cream of Pumpkin Soup
    1. Place onion into TM bowl and chop for 5 seconds on speed 7
    2. Add potato, pumpkin, water, stocks and salt and pepper, and cook for 20 minutes at 100° on speed 1.
    3. Blend for 15-20 seconds by slowly going from speed 1 to speed 9.
    4. Pour soup into Thermo Server with cream.
    5. Serve with fresh homemade spelt bread rolls. (Basic Bread recipe on p112 of Everyday Cookbook, but replace whole wheat grain with spelt wheat.)

    I would add either more pumpkin like an extra 200 grams or reduce the water though.
    Or leave the MC off the whole cook.

    Really quick and easy with items I would always have on hand. Nice flavour, however it doesn't make a huge amount of soup. I reduced the water to 300g which was still probably a bit too much for our liking. Next time I will keep water at 300g but increase the pumpkin and potato by another half each.
