Chocolate fudge

Ingredients

  • 200 g milk chocolate melts
  • 200 g sugar
  • 1 can condensed milk
  • 125 g Butter
  • 25 g liquid glucose

Recipe's preparation

  1. 1. Mill milk chocolate melts at speed 9 for 10 seconds. Set aside.
  2. 2. Mill sugar at speed 9 for 10 seconds.
  3. 3. Add condensed milk, butter and liquid glucose. Cook at 100 degrees, speed 3 for 8 minutes.
  4. 4. Cook at Varoma temperature, speed 2 for 20 minutes.
  5. 5. Add milled chocolate. Mix at speed 3 for 30 seconds.
  6. 6. Line 25x15 (approx) tin or tray with cooking paper. Pour fudge into tin or tray. Refridgerate.
  7. 7. Once set, cut into 2cm squares and serve.
  8. 8. Store in fridge.

    This is delicious!

    This is the first time I have ever made a fudge. I ended up adapting the recipe with what I had on hand and it worked out (it is still setting at the moment but so far it tastes really good!):

    a mix of dark, milk and white choc buttons; 2/3 brown and 1/3 caster sugar; honey instead of glucose syrup. I added 2 tbs instant coffee and about a cup of roasted almonds at the last step.

    I skipped the first step and instead mixed the chocolate and extras in longer at the end.

    We have a Bed & Breakfast, I use this receipe for the fudge I leave for the guests to have with a glass of Port. I do change the Glucose syrup to Honey (smae quantity) anhd it works a treat and I think a bit healthier! I also use a block of Cadbury's Milk Chocolate or Old Gopld ark Chocolate which now come in 180gm blocks and I grind it on number 9, I also reduce the sugar to 180gm .

    Just made 4 batches to give away over Christmas! Candy Cane, Fruit & Nut, Pistachio & Cranberry, Coffee & Walnut.
    I don't bother cutting up the chocolate in step 1, instead I mix it for longer in step 5.

    Step 4, remove measuring cup from lid and cook without.
    Such a great recipe!

    OMG!! This is to die for! Used Aldi Milk Chocolate. Cooked for ten minutes at 105 deg and 10 minutes at Varoma in TM 5. Was worried it might burn but was all good. Don't think I will be making again as it is too hard to resist 😜

    This is real easy and yum. Made with whittakers half creamy milk, half dark fruit and nut. Didn’t whizz the fruit and nut so they stayed whole, just stirred longer at the end. Used golden syrup instead of glucose syrup too - have no idea what that is! Delicious. Making another different flavoured batch now!

    The best! I make this every year for Christmas gifts. It uses approx half the chocolate of most fudge recipes so it is much cheaper to make. I have made the following combinations:
    milk choc, pistachio and cherry ripe
    dark choc and peppermint crisps
    dark choc, coffee and walnut

    Chocolate fudge:
    200g milk choc melts
    200g sugar
    1 tin sweetened condensed milk
    125g butter
    25g glucose syrup

    Milk chocolate speed 9 10 seconds (set aside)
    mill sugar speed 9 10 seconds
    add sweetened condensed milk, glucose and butter cook at 100 degrees
    Speed 3, 8 minutes
    Cook at varoma temperature speed 2 for 20 minutes
    Add milled chocolate speed 3 30 seconds
    Line 25cmx15cm tray with baking paper set in fridge cut into desired sizes

    Made with white chcolate and milk chocolate. My preference was the white but the milk choclate is delicious as well.

    I love this recipe, but needed to make some in a hurry so...... I made my condensed milk then threw everything else in the jug. Mixed as above for 8 mins, then on Varoma for 20mins. Came out beautifully, as usual. I also used ordinary sugar and chocolate melts ( no milling beforehand). I used dark chocolate and added a tsp of peppermint essence. Yum, yum. I wonder if this lot will make it to the Christmas hampers. The last lot didn't as we ate it all.

    I didn't have milk chocolate melts, so used 100g of white block cooking chocolate and 100g dark block cooking chocolate. I also used raw sugar. My husband who considers himself a bit of a fudge connosier says that this is the best I've made yet....woo hoo!!! Thanks for the recipe  Love

    This is the best recipe! Made it for Xmas and made three types. First one as milk chocolate only and was amazing, then made a white chocolate one and added 75g cranberries and 50g pistachios. Delicious. Then a milk choc one with 3 Violet Crumble bars. Sooo good. This is a keeper recipe. Thank you.
