Peanut Butter Satay Chicken

Ingredients

Peanut Butter Chicken

  • 1 large onion, Peeled and halved
  • 30-50 grams olive oil
  • 1 teaspoon curry powder, (or to taste)
  • 800 grams chicken breast or thigh, diced
  • 30 grams soy sauce
  • 30 grams lemon juice
  • 70 grams Teriyaki Sauce, (Not the thick sauce)
  • 3 tablespoons crunchy peanut butter
  • 400ml can Coconut Milk or Cream

Recipe's preparation

    Method
  1. 1. Chop onion 3 secs / sp 5. Add oil and and curry powder and sauté 2 mins / Varoma temp/ Sp 1.
  2. 2. Add Soy Sauce, Lemon Jucie, Teryaki sauce, Peanut Butter and Coconut milk and cook for 0 mins / 100C / speed 1
  3. 3. Add chicken and cook 10 mins / 100C / Counter-clockwise operation / Sp 1


    Serve with rice

Tip

Please note the sauce is runny. You can cook with the measuring cup out (place rice basket on the lid instead) or add some rice flour at the end. I don't bother because the sauce coats the rice beautifully.

While cooking rice you can steam some greens to serve as well.

    Hi, Thanks for this recipe. It was simple to make and adust slightly,according to ingredients I had in the cupboard. I didnt have any teriyaki sauce so I subbed with come cocnut amino's and a small amount of brown sugar. I used Babas curry powder.
    I served it on a bed of mashed potato and steamed brocolli. It would also be nice with either naan bread or pappadums.
    My husband and daughter are devouring it as I write this. Thanks again.

    Had unexpected guests for tea at the last minute and whipped this up in less than 30mins. I added some steamed Asian greens and sprinkled roast peanuts on top. Very tasty and was a hit with everyone

    Only use 50 grams teriyaki sauce  too salty other wise   Stir in 2 tea spoons of corn flour in a small amount of water in last minute of cooking to thicken sauce

    Very nice and easy.  Didn't have teriyaki sauce so used Bubba Rays Bourbon Sauce.  Was a little worried as it was a thick sauce and quite potent!  Was beautiful and made the sauce not runny. Quite peanut buttery.  I love peanut butter so was happy.

    Oh wow what a great dish! Had it for dinner tonight, awesome ! A bonus with this recipe is , even though its so simple anyway , you can do most steps in advance . I dont have a thermosaver , so put in a Pyrex dish with lid and kept warm while I made rice from edc recipe. First time ever making rice in the thermy  ! Yay success all round ( I also added garlic to satay in step 1)) but also like you Selina I liked the sauce runny, thanks for sharing will be making again....and again... x
