Recipe's preparation

    Poaching the eggs
  1. Fill the TM bowl with water to just below the 2 litre mark
  2. Place the steamer basket into the TM bowl.
  3. Bring the water up to temperature by setting to 60 degrees, 5 minutes, speed 3.
  4. Using the scales, weigh 1 of the eggs. This is needed to calculate the cooking time. For each gram that the egg weighs, allow 1 minute of coking time and add 15 minutes.

    So if the egg weighs 50 grams, cook for 50 + 15 = 65 minutes coking time.
  5. Place eggs in basket (the water should just cover the eggs) and cook at 60 degrees, speed 3 for the required time.
  6. Remove eggs and gently crack open the shell. The eggs will slide out onto whatever you wish.

Tip

The thermomix timer only goes up to 60 minutes, so if you need more time, just add the extra minutes once the time has run down enough for you to add the extra time back on.

    These were terrific! I left my eggs out of the fridge overnight and cooked them for 70 mins as they weighed about 55g each. Yolks were a beautiful texture.
