Sweet Potato and Haloumi Burgers

Ingredients

12 piece(s)

Patties

  • 300 grams sweet potato, chopped in to 1-2cm cubes
  • 3 tablespoons Parsley leaves
  • 2 tablespoons mint leaves
  • 135 grams self rasing flour
  • 2 tablespoons Corn Flour
  • 1 teaspoon sea salt
  • 250 grams Haloumi, chopped in to 1cm squares
  • 2 eggs
  • oil, optional, for frying

Recipe's preparation

  1. 1)  If oven baking, preheat oven to 180C.  Skip this step if using fry pan.

     

    2)  Add sweet potato, mint, and parsley to TMX.  Use Turbo 2 or 3 times, for 2 seconds each time, scraping down the sides between each pulse, until sweet potato is chopped finely.

     

    3)  Add other ingredients.  Mix on Speed 4, 3-5 seconds, until mixed through.

     

    4)  Form in to patties and cook.  Patties can either be cooked in the oven at 180C for 7 minutes, flipping, then cooking for a further 5 minutes, or fried in a fry pan, flipping after 2-3 minutes.

    Halloumi isn't veggie!

    "In cheese making, for milk to separate into curds and whey (curdling), the process requires the addition of rennet. Rennet contains the enzyme chymosin. Rennet can be sourced from the abomasum (fourth stomach) of newly-born calves where the chymosin aids digestion and absorption of milk. Adult cows do not have this enzyme. Chymosin is extracted from slaughtered calves by washing and drying the stomach lining, which is cut into small pieces and macerated in a solution of boric acid/brine for 4-5 days. Three of the major sources of protease for coagulating milk are from animal sources, veal calves, adult cows and pigs, the other three are from fungi."

    My husband and I really like these, we make them as our veggie burgers and they're really tasty. They're super quick and easy to make, and because they're quite simple they go with a lot of different accompaniments and can be modified really easily with spices to suit what you're after.

    I do always add a garlic clove or two at the mincing the onion stage and only add one egg to the mix and they're easy to shape in the pan.

    These are really yummy!! Nice hot but i think they're even better cold the next day. I didn't have enough sr flour so topped the required amount up with plain and cooked in the oven. They needed about 15 minutes each side but the wait was worth it. I served them with skinnymixer's new ranch sauce from THMII and the combination was awesome. Will make again. Great recipe.

    These were very tastey and the whole family enjoyed them. I will be cooking them regularly as they are very handy snack or meal for bub too. Well done tmrc_emoticons.) 

    I used a big serving spoon to put mixture into frypan and pat them down with same. They firmed as they cooked and the lid helped to get a nice rise before turning. They looked amazing! Ive found the best recipes can be a bit sloppy tmrc_emoticons.)

    Just made these and had them with some homemade mango chutney. They were really, really good!! I may just reduce the salt to 1/2 Tspn next time but the flavour of the mint in these is divine. Thanks for the recipe.

    I have made these twice since my previous post, but only using one egg, and they turned out absolutely perfect! In fact they were more popular than the meat patties at a recent family do, I will need to make more next time! The parsley and mint gives them a very fresh flavour. Five stars!

    These were delicious! We used them for patties for hamburgers for the vegetarians on Hamburger Night and had the leftovers with sweet chilli sauce and salad for lunch - yum! My batter was a bit sloppy but it did hold together in the pan, I will try them again with one egg next time. Thanks for sharing!

    Made these tasty treats for the family and they were a hit. Easy to prepare and I shallow fried them in a fry pan. I added a variety of cheese including parmesan, fetta and some tasty grated as well as the haloumi and some spicy Moroccan seasoning. Served them with guacamole and coleslaw all made out of my new ThermoMina. They were great they next day in the school lunch box.

    I made this recipe for dinner, I served it with a side salad, and also had it for lunch the next day.  Loved it!  I added a lot of mint, garlic and onion which I sauted in the Closed lid before I put in the sweet potato.  I found that there were a few big chunks of sweet potato which didn't cook down (we pan fried then finished in the oven for 10 minutes to make sure they were cooked all the way through) so next time I will be sure to turbo it a little more to make sure it's all finely chopped up.  Delicious!

    These are great, added sping onion and garlic, used feta instead of haloumi, 110grams of flour, no corn flour needed and also added some cheddar cheese. My boys thought they were great with a bit of yoghurt on top.

    Very nice. I only had 240g of sweet potato so added a small carrot (70g). Also I cook most things like this in a brownie tin with dividers (18 pieces) as I'm on Weight Watchers and it's the easiest way to make equal portions. I would have found it hard to make into patties but it worked fine in the tin. As I couldn't turn the pieces over I left it in the oven for about 20-25 mins.I just had 3 pieces straight from the oven with a side salad. The flavour was a pleasant nutty taste. I may play around next time with onion/garlic or Moroccan spices but as is was quite tasty. As I made it, each piece was 2 propoints with 3 pieces being 7 all up. Very acceptable lunch value.

    These were a winner with my 2.5yo twins. I didn't add parsley or mint. I did add garlic, onion and fresh chilli, also parmesan cheese as I didn't have enough haloumi. Next time I will probably make some tatziki to dip them in.

    I baked mine and like other people the mixture was runny but with extra baking they turned out perfect.

    I had quite a sloppy batter as well - and probably shouldn't have added as much flour as I did to compensate. I've ended up with sweet potato and haloumi cakes instead of burgers - whoops!

    i think they lose something extra by baking instead of frying too. 

    I used basil onstead of mint and parsley and despite not turning out how I expected they are quite yummy and will be great for picnics or lunch boxes. 

    I think you could probably use a different cheese of you couldn't get your hands on haloumi or were making these on a budget - mozzarella or even just tasty cheddar would be fine!

    Holey Dooleys as my daughter used to say! Delish. I baked them in the oven, but to be honest, I think frying them would have just made them that little more special. We had them with a tossed salad and Miss 4 demolished them and asked for some in her lunch box the next day. We try to have a couple of meat free meals each week, and this will go on the regulars board.

    We found these quite bland. The haloumi was still quite chunky after using the turbo button, but I left that for texture incase that was intended. The kids weren't really interested, which surprised me, and my husband and I melted a slice of cheese on top each time we ate one as they were more interesting that way. If I can excite them a bit, they should make a good snack for lunchboxes.

    Excellent base recipe!

    These were great but I took note from the comments about people's batter being 'sloppy' so we only added one egg first - turns out it was enough. We also added white onion, about 1/3 of a large one and next time I think I'll add more or 2 to 3 spring onions and experiment with some spices for that extra flavour. We also did a batch in the oven and a batch on the stove and thought the stove ones turned out better.

    I followed the recipe exactly and ended up with very sloppy "batter". I ended up cooking rounded blobs in the oven but as it was so runny, it took almost 30 mins in a moderate oven. Despite this, they did taste really good. I served them on garlic wraps with lettuce, cheese and tomato. It turned out to be a lovely dish for a hot Summers night! Might use a tad more flour next time...
