Macaroni Muffins
- 900 grams water
- 130 grams macaroni
- 140 grams cheese grated in TMX
- 110 grams Milk
- 1 egg

Recipe's preparation
Pre heat oven to 200 degrees
Cut cheese into rough cubes and Grate 10sec Speed 9, scrape out the bowl and set aside.
Rinse bowl
Add 900g of water and cook 6min/100deg/Speed 1 (this is to get water hot to cook pasta)
Add the 130g of Macaaroni to the water 8-10min/ /100deg
Drain pasta (you can use the basket for this) and set aside.
Give bowl a quick rinse and wipe dry.
Add the grated cheese, 100g milk and 1 egg. Mix 10sec/ Speed 3
Add cooked macaroni to mix and 10sec/speed 2
Spoon this mixture into greased muffin tray making sure to use all the egg/milk mixture.
Bake for 20 minutes then let cool and enjoy.

These are great in lunchboxes and freeze well. You could also make them Gluten Free is using a Gluten free Pasta

I just made these for my fussy daughter. I improvised a bit with what I had. I made a double batch of the 'sauce' I added 1 small zucchini, 1 carrot and a chunk of pumpkin. I also added some garlic paste. I cooked a 250g bag of gluten free penne. They are absolutely delicious and we will definitely make them again!

When I rolled it out, I just added heaps of flour to my hands, flat surface & the mixture so that it the mixture could be patted out into small rounds. I also transfered the rounds to baking paper with extra flour so it didn't stick. Whether it's meant to be that sticky, I'm not sure?

Had intended to save a few for lunchboxes but had to make a second batch straight away as they were devoured. Will triple the recipe next time.
I cooked the macaroni on the stove, and I used 170g of cooked macaroni with the rest of the details the same, and it worked out perfectly. So quick, easy and popular will be doing regularly.

All the kids really liked them. They couldn't wait for them to cool off, so I had trouble getting them out of the pan fast enough. I had cooked the pasta seperately on the stove in only 7 minutes and didn't have to do any cleaning of the pot after mixing the cheese mixture. Added a little bit of vegetable broth to the mix and Parmesan cheese on top before they went in the oven.

What a great idea to add some variety to lunch boxes! I cooked macaroni separately on the stove and whizzed up frozen spinach with the cheese just before adding the milk, plus a little pancetta at the same time. I need to remember to fill the patty pan to overflowing next time,because they really are delicious!
